The Perfect Fall Salad: Redbor Kale with Roasted Squash and Orange

Calling this the perfect fall salad is a big claim. But really, it is. Earthy Redbor kale (a purple or pinkish variety) is dressed in a lightly sweet, tangy vinaigrette with thefragranceof fresh orange. Roasted butternut squash lends heartiness and fall color to the salad, and supremed oranges make it delightful. Fall color abounds, with a wonderful selection of seasonal vegetables and fruit. I daresay this is just the salad to grace your Thanksgiving table, or perhaps just a healthy something for the chef as he or she cooks. Either way, you need this kale salad.

Toasted Pepita Kale Pesto: A Healthy Dinner in Minutes!

In cooler weather, kale pesto is a wonderful alternative to the traditional herbed version. In this easy recipe I used nutty toasted pepitas and lots of creamy Asiago cheese. The simple pesto was a great way to serve up kale, and is flavorful enough to use as a spread or on top of pasta.

When buying your kale, look for robust, bright green leaves for optimal flavor and texture.

Toasted Pepita Kale Pesto

1/3 cup raw pumpkin seeds
3 cups kale leaves, washed, dried, and chopped
1/3 cup olive oil
zest of 1 lemon, plus 2 tablespoons juice
1/4 cup shredded Asiago
2 large cloves garlic, smashed and peeled
1/2 teaspoon salt, or more to taste
2 3 twists fresh ground black pepper

In a small skillet, toast the pumpkin seeds over medium-high heat for 4 minutes.

Combine all of the ingredients in your food processor and process until ingredients have reduced and are smooth, but have a bit of texture left.

Scrape out of the food processor and serve.

An Easy Make-Ahead Thanksgiving Side: Domino Roasted Sweet Potatoes

This year, were rethinking our traditional Thanksgiving table, and experimenting with simpler, healthier side dishes. Recently, I remembered these domino potatoesthat I made last year, and thought they might be great with sweet potatoes. I ended up with a terrific savory side dish, with crisp edges, fragrant herbs, and a hint of sweetness from the sweet potatoes.

These roast sweet potatoes are a cinch to make, and you can even make them ahead of time and reheat just before serving. An easy peasy Thanksgiving? You bet.

Seasonal Fruit Guide: Whats In Season Right Now

Brian and I work hard to keep our eating seasonal and close to home. We still eat lemons and drink coffee, but we do our best to buy the bulk of our ingredients at the local farmers market. But this time of year, eating seasonally gets challenging, especially here in the northeast. And since eating fresh is just as important as eating seasonally (and because our kids are not going to be cool with 5 months of kale and potatoes), we turn to a host of favorite fruits that may not be grown near NYC, but are seasonal and flavorful.

A working knowledge of seasonal fruits adds variety to everyday eats, not to mention fresh, peak flavor from some of our most loved fruits. Below, weve put together a guide to some of the most flavorful fruits to enjoy in the late fall and winter. Whether you live in California, Florida, or Maine, these are foods everyone can enjoy, until something new crops up in the spring.

  Oranges

  Oranges are at their peak starting in early December, and can be found in stores across the country. Healthy, and sweet, they are an ideal kid-friendly snack. Oranges can also be used to enhance meats, salads, and desserts. Try subbing oranges anywhere you might use lemons for a sweet, fragrant change of pace.
