One of our favorite things to do in the cooler weather is bake cookies. It is always so much fun to choose new ingredients to stir into our batter and make up new flavors. Every year I try and think of a few new cookie flavors to make. I mean, when you think about the possibility if nearly infinite. Here are a few of my favorite from the Family Kitchen. They are all new and unusual and are perfect for baking up for fun this fall!

Biscoff Cookies Biscoff Stuffed Salted Chocolate Chip Cookies

The other day a recipe for Nutella Stuffed Sea Salt Cookies blew up on Pinterest and I was intrigued. While I adore Nutella, I have not been craving it lately. Instead Ive been all about Biscoff spread. I love the stuff! Instead of stuffing the cookies with Nutella I turned to my Biscoff spread and gave it a whirl. Luckily, the whole recipe worked out and these delicious cookies were born! They are so decadent and oh so dangerous, I cant get enough of them. I am sure you will feel the same way.

Biscoff Stuffed Salted Chocolate Chip Cookies

loosely adapted from the Ambitious Kitchen

2 1/4 cups all-purpose flour

1 1/4 teaspoons baking soda

1/2 teaspoon kosher salt

2 sticks unsalted butter

1 1/4 cup dark brown sugar

1/4 cup granulated sugar

1 large egg plus 1 large egg yolk

2 teaspoons vanilla extract

1 tablespoon plain Greek yogurt

1 cup semisweet chocolate chips

1 jar of Biscoff spread, chilled

1. In a stand mixer cream the butter and sugars until light and fluffy, about 2 minutes. Then add the egg, egg yolk, vanilla, and yogurt and mix until smooth and creamy. With the stand mixer on low add in the flour, baking soda, and salt and mix until just combined. Stir in the chocolate chips.

2. Wrap the dough in plastic wrap and chill for at least 2 hours or up to overnight.

3. Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper and set aside. Pinch the dough into 1 1/2-inch balls. Flatten each ball with your hand and scoop about 1 small teaspoon of chilled Biscoff into the middle of the dough. Then wrap the dough around it and pinch to seal. Place the dough ball on the cookie sheet and press the top down slightly. Repeat.

4. Bake for 9 to 11 minutes and allow to cool for 5 minutes before transferring to a wire rack to cool completely. If desired, sprinkle tops of cookies with small pinches of sea salt while they cool. Serve!

There is nothing quite as awesome as having a craving for something and finding the homemade mix for it in your pantry. In the mood for pancakes? Pull out a glass jar of healthy homemade mix and you can make it up in a jiffy! Need some brownies? Skip the boxed stuff that is full of preservative and just use the mix you made at home when you had an extra five minutes on hand. I even loved to give DIY mixes as gifts. I package them in glass jars and include a little tag about how to make the cookies, cakes or bars by adding the wet ingredients and baking. It is all so convenient and fun! Here are a few of our favorite DIY mixes to make your life easier and keep your pantry stocked!

Chocolate Chip Zucchini Brownies

Got zucchini? One of my favorite things to do with a summer surplus (besides a dense chocolate cake, muffins or a loaf) is to make brownies. These are like a cross between fudgy brownies and dense chocolate cake itll cure your craving for chocolate, make the kids happy when they come home from school, and use up some of the zucchini hiding out in your fridge, all in one go.

Grated zucchini Chocolate Chip Zucchini Brownies

Grate zucchini with its thin skin on it contains so many of the vegetables nutrients, and has such a fine texture that youll never notice it. Chocolate chips add an extra chocolate dimension to these brownies, but feel free to substitute chopped walnuts or pecans or add both.

Chocolate Chip Zucchini Brownies

1 cup all-purpose flour
1/2 cup cocoa
1/2 tsp. baking powder
1/4 tsp. salt
1/3 cup butter, melted
1/2 cup sugar
1/2 cup packed brown sugar
2 large eggs
1 tsp. vanilla
1 packed cup grated raw, unpeeled zucchini (1 small)
1/2 cup chocolate chips

Preheat oven to 350F.

In a large bowl, combine flour, cocoa, baking powder and salt; set aside.

In a medium bowl, stir together melted butter, sugar, brown sugar, eggs and vanilla until smooth. Add the egg mixture and the zucchini to the flour mixture and stir by hand until almost combined; add chocolate chips and stir just until blended.

Pour into an 8 x 8 pan that has been sprayed with nonstick spray. Bake for 30 minutes, until the edges are springy to the touch but the middle is still soft a slight indentation should be left when touched. Do not overbake! Cool in the pan on a wire rack or eat them warm from the pan.

Makes 12-16 brownies.
