Werthers Caramel Ginger Popcorn

Caramel popcorn is so festive right now with all the halloween parties and the autumn season. I like to add a bit of depth and sophistication to this childhood treat, while still getting the kids excited to chow down. The perfect secret ingredient? Fresh ginger! Keep reading for the recipe

Werthers Caramel Ginger Popcorn

1 bag of lightly salted microwave popcorn popped

2 tablespoons butter

25 Werthers original chewy caramels

2 teaspoon fresh grated ginger (heres the best way to peel ginger)

Preheat oven to 225 degrees. Lightly spray a baking sheet. Pour the popcorn into a large bowl, remove any un-popped kernels. Place butter in a small sauce pan and add the fresh ginger. Cook over medium low heat until melted, add the 25 caramel pieces. gently stir until caramel is completely melted and blends with the butter to form a smooth mixture. Pour half the caramel over the popcorn and stir, then pour the other half of the caramel and continue to stir until evenly dispersed. Pour onto baking sheet and spread out. Bake for 15 minutes, stir, then bake for another 15 minutes. Remove, allow to cool just enough to eat. Store in an airtight container.

Salted Caramel Microwave Popcorn

When it comes to autumn, theres nothing quite so deeeelicious as caramel popcorn. The only problem? All that muss and fuss? Nix the time-consuming process of making your own pot of caramel with this simple recipe for Microwave Salted Caramel Popcorn. So easy, soo delicious!

Microwave Caramel Popcorn

• 1/2 cup unpopped popcorn
• 1/4 cup butter
• 1/4 cup corn syrup
• 1/4 cup brown sugar
• 1 teaspoon vanilla
• pinch baking soda
• pinch good quality sea salt
• 1/2 cup candy corn

Pour unpopped corn into a large, brown grocery bag. Fold the bag down tightly several times. Microwave for 3-5 minutes, or until the popping slows down to 2-4 seconds between pops. Remove, gently open the bag and allow popcorn to cool slightly before picking up large handfuls of the popcorn and transferring it to a large bowl. (Dont just dump the popcorn into the bowl,transferringit by handfuls will allow the unpopped kernels to fall to the bottom of the bag and stay out of your final batch of caramel popcorn.)

Place butter, corn syrup, and brown sugar into a large, microwave-safe bowl. Microwave for 60 seconds, whisk together, then microwave for an additional 2-3 minutes, or until the mixture begins to boil. Remove from microwave and whisk in the vanilla, baking soda, and salt. Drizzle over popcorn. Toss to coat. Serve and enjoy!
