Better than Starbucks Pumpkin Cream Cheese Muffins

We had a family brunch this past weekend, and my sister made pumpkin muffins the kind with the cream cheese in the middle. They were better than the ones at Starbucks moist, sweet and mildly spiced a total hit. She left some plain, for the kids who didnt like the cream cheese filling (unbelievable, but it happens), and they were divine too the perfect nibble with our morning coffee. I took a few home to wrap and freeze for school lunches this week, although I may not be able to part with them. Then again, theyre easy to make, even with the cream cheese filling, and a perfect treat for this time of year I already have plans to mix up another batch.

Although I used canned pumpkin puree easy to find and often on sale at this time of year you could use mashed roasted pumpkin, squash or sweet potato instead.

These are moist, tender and sweet enough to count as cupcakes with the added benefit of coming out of the oven pre-decorated, theres no need for frosting. But if you did add a swirl of vanilla frosting, it would leave the cream cheese hidden almost like a filled cupcake.

Pumpkin Cream Cheese Muffins

With thanks to my sister, and her friend who shared the recipe!

Cream Cheese:
6 oz. cream cheese, softened
1/4 cup sugar
1 egg
2 Tbsp. flour

Muffins:
1 14 oz. (398 ml) can pumpkin puree
1 cup sugar
1 cup canola oil
1 large egg
3 cups flour (all-purpose, whole wheat or a combination)
1 Tbsp. cinnamon
1 tsp. nutmeg
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt

Preheat the oven to 350F.

In a small bowl, stir together the cream cheese, sugar, egg and flour until well-blended and smooth.

To make the muffins, mix the pumpkin, sugar, oil and egg in a large bowl. In another bowl, stir together the dry ingredients; add to the pumpkin mixture and stir just until combined.

Use the handle of a wooden spoon to make a little hole in center of each muffin; drop in a small spoonful of the cream cheese mixture. If you like, sprinkle with coarse sugar. Bake for 25 minutes, or until springy to the touch. Makes 1 1/2 dozen muffins.

Ill admit, we spend more money at Starbucks than we probably should. When we lived in Manhattan I stopped in nearly twice a day with my little baby girl and would also try to find things both of us could enjoy. Over time I got to know the secret kids menu. A few things were in plain sight, but a lot of things were not. For example, one Mom taught me how to order a raspberry Italian soda, another let me in on the secret babycinno. I already knew about vanilla steamers but was happy to rediscover them just in time to introduce them to my daughter. The Ultimate Comfort Starbucks Copycat Drink: Vanilla Steamer with Cinnamon

I have always been a milk drinker. When I was little I would drink it with every meal and these days I still love to have it with breakfast or lunch. I find it so comforting and soothing and have especially enjoyed drinking it while I am pregnant. One of the things I order at Starbucks from time to time is a simple vanilla steamer with cinnamon. Most of the time I omit the whipped cream, but sometimes I indulge. I also make it at home on occasion when I have the blender at the ready. I would really love a milk frother for Christmas, but until then the blender it is. Here is how I make my favorite vanilla steamer at home!

Vanilla Steamer with Cinnamon

1 1/2 cups 1% or skim milk (2% is fine too)

2 teaspoons vanilla extract

Whipped cream, optional

1/2 teaspoon ground cinnamon

1. Warm the milk in a small saucepan over medium heat and pour in the vanilla extract. Allow the milk to warm through but do not allow it to simmer or boil. It is hot when steam rises from the center of the pan.

2. Pour the warmed milk into a blender and whiz on high for about a minute or until the milk is good and frothy.

3. Pour the milk into a heatproof cup and top with whipped cream (if desired), and a sprinkle of cinnamon.

Homemade Pumpkin Spice Latte

Its that time of year when pumpkin spice lattes pop up on Starbucks menu boards and I gaze longingly at anyone walking by with a cup, wondering which of the festive flavors theyve picked. Of course as a freelancer I dont have the budget for a daily take-out latte, so its nice to know that not only can I brew a good cup of coffee at home, I can whip up an authentic pumpkin spice latte to sip at my desk, or share with friends, at a fraction of the cost.

Although it seems like a coffee shop extravagance, it really doesnt require special skills to make your own. If you dont have a coffee maker, use instant I prefer instant espresso, which has a smoother flavor. Now to whip up a batch of Starbucks petite vanilla bean scones to serve alongside

Homemade Pumpkin Spice Latte

adapted from AllRecipes

3 cups whole milk, warmed
1 Tbsp. sugar, or to taste
1/2 tsp. vanilla
1/2 tsp. pumpkin pie spice
3/4-1 cup double-strength brewed coffee
lightly whipped cream
a shake of pumpkin pie spice

Combine the hot milk, sugar, vanilla and pumpkin pie spice in a blender; blend until frothy. Pour the mixture into 2-3 coffee mugs, filling them about 2/3 full. Divide the coffee between the mugs, and top with whipped cream and a pinch of pumpkin pie spice. Serves 2-3.
