My familys favorite way to eat turkey is in the form of a meatball. We will have them plain, with sauce or lately as the headliner in a hearty vegetable soup. Its one of those simple and delicious one-pot meals that makes you long for leftovers and warms your soul on a cold fall day. My kids even ask for it in their lunch the next day thats saying a lot coming from my PB & J everyday kids!

Turkey Meatball And Hearty Vegetable Soup

1 lb lean ground turkey

1/3 cup Italian seasoned breadcrumbs

1 teaspoon Italian seasoning

1/3 of an onion finely chopped

salt and pepper

1 egg

2 tablespoons Worcestershire sauce

cup milk

Mix the ground turkey with the dry ingredients and onion. Combine the wet ingredients in a separate bowl and whisk together, then pour into the ground turkey. Gently stir to combine and form into small balls. Heat olive oil in a dutch oven over medium heat and place the meatballs into the pot. Cook for about 5 minutes, then flip and cook an additional 3 minutes. Remove from pot and set aside. Now its time to make your soup.

2 tablespoon olive oil

2/3 onion roughly chopped

3 cloves of garlic, crushed

salt and pepper

1/2 cup white wine

4 cups of chicken broth

cup water

1 can diced tomatoes

1 can stewed tomatoes (I puree these with a stick blender)

1 cup of sliced carrots

2 cups thick sliced green and yellow squash/zucchini

1 teaspoon oregano

1 teaspoon basil

1 tablespoons parsley

10 oz package of cheese tortellini

1 teaspoon sugar

parmesan cheese

Heat oil in the dutch oven with the brown bits from the meatballs. Add the onion, garlic, salt and pepper, cook for about 5 minutes until onion is translucent. Add wine to deglaze the pan. Once the bit are off the bottom of the pan, add the broth, wine, tomatoes, water and carrots. Simmer for 30 minutes. Add the zucchini, herbs, tortellini and sugar and simmer for an additional 10 minutes. Then add the meatballs and cook for another 10 minutes and serve with a sprinkling of parmesan cheese.

Pulled pork is always a hit around here, and it occurred to me recently that the chicken thighs in my freezer would make an easy, tasty, inexpensive dinner with only a few minutes effort. I tossed all the ingredients into the slow cooker at noon, and by dinnertime we had a kid-friendly meal all ready to go. A bag of coleslaw completed the deal and while everyone else loaded theirs on soft buns, I ate mine straight-up, and it was wonderful. Its easy to make a large batch of and freeze, so that dinner will be taken care of one night down the road.

Slow Cooker Pulled Barbecue Chicken

1 cup tomato sauce
2 Tbsp. apple cider vinegar
2 Tbsp. honey
1 Tbsp. chili powder
1 Tbsp. tomato paste
1 Tbsp. Worcestershire sauce
1 tsp. chipotles in adobo (optional)
1/4 tsp. salt
2 1/2 pounds boneless, skinless chicken thighs, trimmed of fat
1 small onion, finely chopped
1 clove garlic, minced

In the bowl of a 6 quart slow cooker, stir together the tomato sauce, vinegar, honey, chili powder, tomato paste, Worcestershire sauce, chipotles and salt. Add the chicken, onion and garlic.

Cover and cook on low for 4-5 hours, until the chicken can be pulled apart with forks. Serve straight-up or on soft buns, with creamy slaw on the side. Serves 6-8.

Easy Slow Cooker Pulled Pork

Pulled pork is always a hit at dinnertime in our house, and luckily its among the easiest things to make, especially in the slow cooker. A few minutes prep in the morning, and we can eat within minutes of walking in the door at the end of the day. This classic pulled pork is made with pork shoulder, an inexpensive cut made meltingly tender by the long, slow cooking time. I like to buy a big one leftovers freeze very well, or make great sandwiches to bring to work or school for lunch the next day. Sometimes I skip the soft buns and make a batch of biscuits or cheese biscuits, if Im in a particularly indulgent mood to split and serve the pulled pork on.


Another great thing about a slow cooker full of pulled pork: everyone can serve themselves at different times, according to their schedules, and dinner will always be hot and ready to go.

Easy Slow Cooker Pulled Pork

3-1/2 lb (1.75 kg) pork shoulder roast
salt and pepper
canola oil
2 onions, chopped
4 cloves garlic, crushed
2 Tbsp. chili powder
2 bay leaves
1/4 cup tomato paste
1 14 oz/398 mL can tomato sauce
2 Tbsp. each packed brown sugar
2 Tbsp. cider vinegar
2 Tbsp. Worcestershire sauce
soft rolls, for serving
barbecue sauce, for serving

Sprinkle pork with salt and pepper. In a large skillet, heat a drizzle of oil over medium-high heat and brown pork on all sides. Transfer to the slow cooker.

Add the onions, garlic, chili powder and bay leaves to the pan and saute for a few minutes, loosening any browned bits in the bottom of the pan. Add 1/4 cup water to help loosen all the flavorful bits and pour everything over the pork in the slow cooker.

Add the tomato paste, tomato sauce, sugar, vinegar and Worcestershire sauce, cover and cook on low for 8 hours, until pork is very tender. With two forks, shred or pull pork. Pour off excess liquid if there is too much, and add a few shakes of barbecue sauce to moisten. Serve warm, on split buns or biscuits, with additional barbecue sauce passed at the table.

Serves 8-10.
