Chocolate Pumpkin Ice Cream Sandwiches

Looking for a simple, delicious alternative to pumpkin pie this Thanksgiving? Try cool and creamy pumpkin ice cream sandwiches a dessert you can make in advance and keep stashed in the freezer, then serve individually, pleasing kids and grown-ups alike. We decided to take our favorite summer dessert at our favorite summer eatery and recreate it for holiday festivities ice cream sandwiches are perfect for large groups or parties: wrap them in a festive napkin and the kids can even take them to go what more could you ask for at the end of a holiday meal?

Ice cream sandwiches are so simple, you dont really need a recipe. Start with your favourite chocolate or gingersnap cookie recipe I like using these gluten-free chocolate puddle cookies or these chewy ginger molasses crinkles.

Bake them in whatever size youd like your finished sandwiches to be, making sure theyre fairly uniform in size, so that they sandwich evenly. Cool them completely,

If you really want to start from scratch, make a batch of pumpkin pie ice cream. Otherwise, stir a big spoonful of pumpkin puree and a shake of pumpkin pie spice into some softened vanilla ice cream, then spread on the bottoms of half the cookies, sandwiching them with a second cookie. If you like, roll the edges in crushed walnuts or pecans. Wrap individually and freeze until solid, or until you want to serve them.

Brownie Ice Cream Sandwich

Last weekend I made the most addicting ice cream sandwiches and they were a complete accident. What I had planned to make was brownie ice cream sandwiches, but a hurt foot halted the process. I was left with a giant sheet of brownies and a tub of ice cream. Try being 5.5 months pregnant with those lying around the house. Not good. So I went ahead and made those brownie ice cream sandwiches and distributed them around the neighborhood. Ive been asked to go into business, oh dear. These were actually quite simple to make as I used a mix (I got lazy) and I doubled the recipe.

Brownie Ice Cream Sandwich

1 box of brownie mix

4 tablespoons of unsalted butter, softened

1 egg

1 teaspoon vanilla

1/4 teaspoon salt

1 tub vanilla ice cream (I used reduced fat)

Preheat oven to 350. In the bowl of a mixer combine the brownie mix with the egg, soft butter, vanilla and salt. Mix on medium for about a minute until a thick dough forms. Line an 88 pan with parchment or foil (spray with cooking spray) and spread out the batter. It will seem thin, but thats OK. Cook for 15-20 minutes or until toothpick comes out clean. Remove from oven and remove the brownies from the pan and allow to cool completely. Once cool, cut into preferred equal sizes.

You have two options for preparing your ice cream. While the brownies are cooking, some people take ice cream and spread it out onto a lined baking pan (same size as the brownies), just make it about an inch thick or so, whatever you prefer. Place back in the freezer, then cut into the same size as your brownies and assemble. I skip this step and just let the ice cream get a little soft, then I just scoop it onto the brownie and either serve immediately or refreeze for later.

Best School Lunch Containers

Im kind of obsessed with keeping my storage container drawer organized, but I just seem to fail. I took the advice to buy containers that stack and use the same size lid, that way theres always a lid. Then kids came home with the bottom and lids were tossed or I would find lids and the containers would be filled with dirt outside. My food storage cupboard was a disaster. I ordered a set of Mr Lids (how great is the name?!), but wasnt sure how they would hold up in person. Turns out they are amazing and sturdy and hold up to my 3 year old boy! The Best Ever Ice Cream Sandwich

This past weekend we were invited over to my aunts house for a college send-off dinner. I was asked to bring dessert for my ice cream loving cousin and had planned to make ice cream sandwiches out of brownies, but trauma got in the way. My 6 year old daughter hurt her foot mid prep and all attention had to be redirected towards her (ps, this always seems to happen!). As I tended to her wound, I was not left with enough time to finish up my ice cream creations. So I improvised and made what my husband calls crack sandwiches. Keep reading to get the most addicting ice cream sandwich recipe.

Heres what ended up happening: I went to the pantry and grabbed a box of vanilla wafer cookies and some vanilla caramel ice cream from the freezer. I just scooped and squished and re-froze. They were a huge hit. We ended up making these for dessert tonight and the kids got to make their own. Perfect size dessert for little ones and adults trying to maintain some portion control.

Best Ever Ice Cream Sandwich

1 box of vanilla wafer cookies (nilla wafers)

1 carton of reduced fat vanilla ice cream with caramel

Allow the ice cream to sit out for a few minutes to just soften. Line up the cookies on a tray that will fit in your freezer. Scoop a small spoonful onto each cookie and place another cookie on top. Press down lightly. Place ice cream sandwiches on the tray into the freezer until frozen and hard (or just eat as you make!). Now you can eat them all to yourself because you wont be able to stop.
