My favorite way to eat broccoli is this: Cheezy. And roasted. This Cheezy Roasted Broccoli recipe infuses each green broccoli branch with some serious savory flavor. Roasting these yummy, healthy green stems caramelizes the edges and brings out some cravable veggie flavor. Get my recipe and check out the healthy cheezy twist..

The secret cheezy ingredient is nutritional yeast. Have you tried this stuff on pasta and veggies?? It rocks! You wouldnt ever guess that it is actually incredibly healthy for you packed with nutrients thus the name.

You can even use it to make a delicious dairy-free vegan parmesan sprinkle.

Cheezy Roasted Broccoli
vegan, makes 4-5 cups (broccoli shrinks as it roasts)

2-3 Tbsp tamari or soy sauce (or braggs Liquid Aminos)
1 Tbsp maple syrup
6 cups broccoli (stalks sliced thin and florets cut into bite-sized pieces)
2-3 Tbsp extra virgin olive oil
1/2 cup nutritional yeast flakes
1/4 tsp black pepper

Directions:

1. Turn oven to 415 degrees.
2. Prep broccoli and toss well with all ingredients.
3. Lay broccoli in one layer on a baking sheet.
4. Bake at 400 degrees for 10-20 minutes or until edges become tender and caramelized. Cooking time will depend on how large your florets have been sliced and how tough your broccoli is.

Miso Maple Lemon Kale Chips
makes 2-3 cups

1 large bunch green kale

sauce:
1 heaping Tbsp white miso paste
1/4 cup lemon juice
2 Tbsp maple syrup
1/4 tsp black pepper
a few dashes cayenne (optional)
2 Tbsp extra virgin olive oil

added: 1/4 cup nutritional yeast (optional)

Directions:

1. Turn oven to lowest setting to preheat around 200 degrees works. (Or dehydrate if youd like!)
2. De-vein kale and wash + dry leaves well.
3. Mix up sauce in large bowl.
4. Toss the kale i the sauce then dredge the leaves through the nutritional yeast to coat.
5. Lay leaves on a greased baking sheet or wax paper.
6. Bake until crispy. Depending on how wet you soaked your kale this could take anywhere from 30 minutes to 2 hours. Keep checking and when the leaves are crispy they are done!

Looking for a super easy main course or side dish that is oozing with warmth and comfort-food appeal? Try this Quickie Lemon-Cajun Spiced Pasta. Vibrant lemon and cajun spice flavors coat the fluffy spirals of veggie-colored pasta. A splash of EVOO and a secret ingredient too!..

Secret Ingredient. If you have not yet tried nutritional yeast on your pasta what are you waiting for? This stuff is amazing. It adds a bold cheezy flavor without any of the unhealthy cheese things like saturated fat. Plus it even has a very nice array of healthy nutrients thus the name..

You could also try this non-dairy cheese sprinkle recipe. SO delicious and savory + healthy!

Quickie Lemon-Cajun Spiced Pasta
vegan, serves 4 + leftovers

16oz. bag of pasta spiral veggie from Trader Joes used here
1 Tbsp Cajun spices (unsalted)
1/4 cup extra virgin olive oil
1/4 cup fresh lemon juice + pinch of zest
salt + pepper to taste
1/3 cup nutritional yeast (or cheezy sprinkle)

Directions:

1. Cook pasta. Drain.
2. Toss warm pasta in EVOO, lemon juice and cajun spices. Toss well.
3. Add in the nutritional yeast and salt and pepper to taste.
4. Serve with extra spices + nutritional yeast on top.

Fresh herbs add a nice touch. Try flat-leaf parsley o fresh basil, chopped and sprinkled over top warm pasta.
