6 Grown-Up Sandwiches For Busy Moms

Lets face it, us moms find ourselves scavenging for lunch. I know I just grabbed a handful of almonds and a nectarine. Thats not going to cut it and I wouldnt mind feeling like a real grow-up while we are at it. I love meeting up with a friend for lunch and ordering a lovely sandwich or tartine, but thats rare. I usually find myself busy working at home (coming up with recipes for you all!) while doing all the other household duties laundry is calling me and Ive got a bazillion calls to make. Its time I figured out a better lunch for myself, a treat to make me feel special while I work away in solitude wearing pajamas. Ive found some super simple recipes that are sure to do the trick. I may even bust out a glass and pour myself some sparkling water! Heres to brightening our long and hectic days.

  Fresh and crisp cucumbers make for a delicious sandwich and this recipe is vegan. If you are not vegan just sub the tofu cream cheese for regular whipped. I think I might add some flavored cream cheese, like veggie. Yum!

  Another vegan variety only this one is sweet and juicy, with a bit of savory to balance things out. Feel free to use regular cream cheese instead of vegan.
