Last Minute Watermelon Salad for Labor Day

With the end of summer just around the corner it is time to take advantage of the last few flavors of the season while they are still here. One of our favorite things all summer long is watermelon. Yes, we will be able to get it practically year round, but it really is the best in the summer. This time of year I like to take advantage of the fresh fruit and make it into dishes that are both savory and sweet.

This watermelon salad is a particular favorite of ours because it is tangy, sweet, and savory all at once. I also love it because it can truly be made at the last minute. For example, if you have a party to go to this weekend look no further than this recipe and youll be all set to go in just a few minutes! Have a happy and safe Labor Day weekend!

Fresh Ideas for Late Summer Entertaining

Its not too late for warm-weather entertaining on the patio the last long weekend before school starts provides a perfect opportunity for one last hurrah. If youre new to hosting parties, or are looking for new inspiration, here are some fresh ideas for great eats, drinks, themes, and summery serving suggestions and decor.

Because watermelon is a classic summer treat, providing sweet refreshment thats perfect for entertaining, the folks at the Watermelon Promotion Board came up with some great ideas to help make your late summer party the seasons best.

Choose colour: Energetic colours are in this summer. Orange, salmon, sunny yellow and chartreuse make up the perfect palette to decorate your table and backyard with. You can also incorporate these colours into the food and drink you serve. Think: Watermelon Pina Coladas.

Mason jars: Greet your guests with a Watermelon Caipirinha in a mason jar. Preparing a signature welcome drink in advance gives you more time to mingle with your guests. Keep the mason jars on ice in a beverage tub or a big galvanized bucket.

Lollipops: Cake, fruits, cheese and meat served on a stick add wow factor to any menu. For your backyard party, serve lollipops speared into a wheatgrass bed or onto a watermelon. For an extra kick, consider topping the sticks with Spiked Melon Balls.

Set the mood: Set the mood with LED candles and solar lanterns. Large hurricane lamps sitting on the ground nicely define party areas and work well to light up footpaths.

Parchment paper: For a summer picnic with family and friends, impress the crowd with some delicious Jamaican Rock Lobster Tacos wrapped in parchment paper and tied with twine.

Watermelon-Lavender Sorbet Makes a Healthy Frozen Treat

These last summer days are hotter than ever, and while the piles of watermelons at the grocery store and farmers markets are tempting, eating them by the wedge is getting dull. This refreshing sorbet is easy to make, and packed with watermelon flavor its like the fruit, only better, and served frozen. Its lightness is refreshing after a summer spent at the ice cream shop.

What better way to get a full serving of fruit than in this delicious sorbet? Fresh watermelon adds vitamin A, vitamin C, and lots of lycopene, while the lavender adds elegant floral notes. Perfect for patio parties while its still warm enough to eat outside.

Watermelon-Lavender Sorbet

Ingredients:
4 1/2 cups pureed watermelon pulp (divided)
1/2 cup sugar
1 tablespoon lavender (culinary lavender, or try using lavender tea)
1/8 teaspoon salt
2 tablespoons lemon juice
2 tablespoons vodka (watermelon or citrus flavor optional helps to prevent sorbet from setting up too firm)

Instructions:

In a small saucepan over medium high heat, add 1/2 cup watermelon pulp, sugar, lavender and salt. Bring to a slow boil, then simmer for 5 minutes. Remove from heat and cover for 10 minutes.

Place strainer over a large bowl and pour syrup mixture through, straining out lavender flowers. Add remaining 4 cups watermelon, lemon juice and vodka. Stir until blended.

Pour into container, cover, place in freezer. When semi-solid, mash up sorbet with fork and freeze again. When frozen, place sorbet mixture into a blender or food processor and process until smooth. Scoop desired amount into a small bowl or parfait dish, garnish with a small wedge of watermelon and a lavender sprig.
