When the weather gets cooler I turn to serving warmer food. Gone are the summer days of no-cook gazpacho and fall nights of hot, hearty sauces have arrived. This is one of my favorite simple weeknight sauces and it only takes a couple of fresh pork sausages, some marinara, and your favorite pasta. It takes all of 20 minutes to pull together. Need dinner in a snap? Here you go!
Penne with Pork Sausage
3/4 lb of rotini or your favorite dried pasta
3 large fresh pork sausages
2 cups fresh marinara sauce
Parmesan cheese for garnish
1. Cook the pasta according to box directions. Drain and reserve.
2. Meanwhile, remove the casings from the sausage and crumble it into a heavy bottomed stockpot. Turn the heat to medium-low and use a wooden spoon to break up the sausage while it cooks. Turn it over from time to time so that it cooks through evenly. Once it has cooked pour in the marinara sauce and reduce the heat to low. Allow the sauce to simmer for about 10 minutes.
3. Divide the pasta amongst four bowls and spoon the sausage sausage over each bowl of pasta. Garnish each bowl with Parmesan. Serve!
