Bread Machine Flax Pizza Dough
Lately my favorite recipe is bread machine flax pizza dough. I make homemade pizza a lot because its so versatile and I can use whatever ingredients I happen to have on hand. The kids love to help make pizza, so its a great way to get them involved with cooking. This particular dough is my favorite because all I have to do is toss theingredients in my bread machine and 2 hours later I have a lovely and healthy pizzadough waiting for me. It freezes well too.

Lemon Icebox Cake
Do you remember the scene in Castaway where Tom Hanks finally gets that sparkgoing, stands in front of the blaze and bellows, "FIRE!"? My lemon icebox cakeis that scene for me. That recipe pushed me way out of my comfort zone. After Ifinished making the cake and it was in the refrigerator, I promised myself I wouldnever make it again. Then I ate it and threw that promise out the window. Every inchof my kitchen was a mess, but it was so worth it. Best cake I've ever eaten, and yes, Iwill make it again.

Creamy Cheesy Potatoes
When I was younger, we would devour these very quickly at the dinner table. If there were any leftovers, we would fight for them! These potatoes make a great side dish, but if you need a main dish, simply brown chicken breasts and nestle them in between the potatoes. Browned pork chops, or thick slices of ham are also very good. Then you have a full meal, thats simple, easy and delicious.
