Fun for Kids: Caramel Apple Cider Boo Shooters

When it comes to feeding kids on Halloween we all know how totally wired the kids can get. I mean, the sugar has got to be restricted one way or another! I recently came up with these cute caramel apple cider shooters for my daughter. They are a new way to look at apple cider under the guise of a sweet fall treat. Poured into shot glasses rimmed with sprinkles, and garnished with apple slices and a drizzle of caramel they are the perfect not too sweet kid treat for fall.

Caramel Apple Cider Boo Shooters

1 cup apple cider

4 tablespoons caramel

Halloween sprinkles

4 slices of apple

1. Dip four shot glasses in the caramel and then dip them in the Halloween sprinkles to rim the glasses. Make little boo faces on the shot glasses with a Sharpie if desired!

2. Pour the cider into the shot glasses and garnish with apple slices. Drizzle any remaining caramel over the apple slices. Serve!

Sometimes I cant help myself, I love to make donuts on the weekends. It may not be the healthiest habit but Ill worry about that after the baby comes and I am on a strict diet of water and air. Delicious apple cider from our local cider mill is one of my favorite things about fall. I love how it is the one true drink that actually tastes like apples without any imitation flavors or colors. Over the years Ive come to love using apple cider in my favorite beverages and baked goods. I know nobody can deny just how delicious an apple cider donut can be. We love them! Homemade Apple Fun: Apple Cider Donut Holes

Hip hip hooray for apple season! My daughter started school this week and we decided to celebrate with some homemade apple cider donut holes. My friend Nicole actually asked me cider donut recipe last year because her kids are addicted to them as mine is. Ive been dragging my feet in coming up something because I really wanted to wait for apple cider season. Now that it is here it is one of the first things I made with my first half gallon of the season! Moist and sugary they are just the perfect fall treat for your family this season.

Apple Cider Donut Holes

adapted from Lara Ferroni

2 cups all-purpose flour

2 teaspoons cinnamon

2 teaspoons baking powder

1 teaspoon baking soda

1/2 teaspoon kosher salt

2 tablespoons unsalted butter

1/2 cup superfine sugar

1 teaspoon vanilla extract

2 large egg yolks

1/4 cup apple cider

1/4 cup buttermilk

Vegetable oil for frying

1. In a small bowl whisk the flours, cinnamon, baking powder, baking soda and salt in a bowl and set aside.

2. Using an electric mixer cream the butter and sugar, then add the egg yolks and mix well until pale and fluffy. Then, add in the vanilla, cider and buttermilk. Slowly stir in the dry ingredients until a sticky dough forms. Then wrap the dough in plastic wrap and refrigerate for 20 minutes.

3. Pour 2-inchs of oil in a heavy bottomed pot and heat to 300F on a candy thermometer. Pinch off 2 1/2-inch sized balls and drop in the hot oil, turning them once so each side cooks for about 1-minute. Use a ladle to spoon out the cooked donut holes and place on a plate lined with a plate lined with a paper towel. Let cool slightly then roll in cinnamon sugar, or desired glaze, before eating!
