Three Ingredient Vegan Caramel Apples

I recently made an amazingly easy-delicious vegan caramel apple and hope everyone who loves caramel apples gives this coconut milk (instead of dairy milk or cream) version a try. I was shocked to find that veganizing caramel sauce is not only super easy, but also super delicious. And the best part if that your can still use minimal ingredients. Just three to be exact. Get my recipe for Three Ingredient Vegan Caramel Apples

For a more extensive recipe using crushed walnuts, chocolate, sea salt and some vanilla, visit my recipe on Healthy. Happy. Life. But for a bare bones recipe that works like a dream, try this one below.

Three Ingredient Caramel Apples
vegan, makes one large caramel apple

You will need three ingredients:

1 apple (washed + dried well)
2 organic granulated sugar
3 coconut cream (from full fat coconut milk*)

*coconut cream can be obtained by scooping the firm white stuff off the top of a can of coconut milk chill the can first for easiest scooping)

Directions:

1. Add 3-4 Tbsp of sugar to a saute pan, over high heat.
2. Add 2 Tbsp coconut cream. Melt and stir briskly until the mixture is bubbling. Do this for about a minute or two until all the sugar is dissolved.
3. Reduce heat to low and stir for another minute.
4. Turn off heat, pour mixture into a small bowl and place in the fridge until is chills to a sticky state. Usually 20 minutes.
5. Dip apple in the caramel and your apple is done!

Halloween Treats for Grown-Ups: Salted Caramel Apples

Salted caramel has been one of the hottest food trends this past year; why not bring that delicious sweet and salty to a classic caramel apple? The sweet, crisp juiciness of the apples make the perfect ballast to rich caramel and crunchy sea salt; starting with Werthers chewy caramels, these are also quick to make, and fun for kids to help make sure theyre sparing with the sprinkle of sea salt, and add it quickly, before the caramel sets.

Start with unwrapped caramels small hands make easy work of this part and add cream (or even water) until the mixture is smooth and dippable. If it solidifies as youre coating your apples, rewarm it, adding a little more liquid if needed.

Bagged apples tend to be smaller than those you buy from the bins at the grocery store they make better caramel apples, easier to handle and less caramel to coat! If you like, jazz up your apples with a sprinkle of chopped salted peanuts instead.

Salted Caramel Apples

5-6 small tart apples
1 158 g pkg. Werthers Original Chewy Caramels, unwrapped
1/4 cup heavy cream or 3 Tbsp. water
flaky sea salt

Wash and thoroughly dry the apples, and push a wooden or paper stick into the stem end of each.

In a small saucepan or microwave-safe bowl, heat the caramels and cream or water over low heat or in the microwave, stirring occasionally, until melted and smooth. Stir in a pinch of sea salt.

Dip each apple into the caramel mixture, turning to coat, and let the excess drip off before setting them stick-up on a piece of waxed or parchment paper. Sprinkle lightly with sea salt before the caramel sets. Makes 5-6 caramel apples; recipe can be easily doubled.

This year my daughter has gotten intrigued by caramel apples. This is the first year shes been interested. Last year she just wanted apples plain and sliced plain and simple. This year she has been more adventurous. To have some fun with our apple dipping we decided try dipping it in all kinds of fun stuff. First we did caramel and peanut butter, then we tried caramel followed by a whole dish of sprinkles. Lastly, we tried dipping it in nutella and it was amazing. The flavors were delicious and the colors swirling together were equally as delectable. This has easily become our newest sweet caramel apple treat!

Caramel Nutella Dipped Apple Slices

4 apples, sliced in to 6 to 8 wedges each, seeds and more removed

1 bag (11 ounces) caramels, unwrapped

4 tablespoons cream

1 cup Nutella

1. Place the apple slices in a bowl.

2. Place the caramels and cream in a double boiler set over boiling water and stir until completely smooth. Dip the apples in the caramel and turn to coat. Then place them on a lined baking sheet and allow to cool for 10 minutes. Then, dip the caramel in the Nutella and return to the lined baking sheet. Allow to cool completely before eating.

Bacon Caramel Apples

Why yes, these are caramel apples topped with bacon. Just when you thought Halloween treats couldnt be improved upon I give you the bacon caramel apple! Bacon and caramel is a delicious combination, as is bacon and apples so why not douse chewy candy apples with chunks of crisp, salty bacon? It doesnt get much better than this the perfect balance of crisp, chewy, crunchy, salty and sweet and easy to make, so anyone can be a Halloween hero.

This is the easy method, starting with wrapped caramels if you want to make the caramel from scratch, youll find a great recipe here. Cooking the bacon and then using a spoonful of drippings in the caramel adds another dimension of bacony goodness.

I set all of mine down on a single piece of parchment, then cut rough squares around the bases with a knife once they cooled.

Bacon Caramel Apples

This recipe can be easily doubled or tripled for a crowd if the caramel cools as youre dipping the apples, gently rewarm it, adding a little more water if needed.

6 small apples
3-4 slices bacon
1 bag (11 oz.) caramels, unwrapped
3 Tbsp. water

Wash and dry the apples well, and insert a wood or paper stick into the stem end of each.

Chop the bacon and cook it until crisp; remove with a slotted spoon to drain on paper towels, then crumble or roughly chop. Reserve 1 Tbsp. of the drippings and pour it into a small saucepan with the caramels and cream or water. Cook over medium-low heat until completely melted and smooth.

Dip the apples into the caramel, turning to coat completely, then allow excess caramel to drip off and set on a parchment-lined sheet. Sprinkle with bacon while the caramel is still soft, then let set. Makes 6 caramel apples recipe can be easily doubled or tripled.
