We are big fans of spaghetti and meatballs around here. When fall rolls around I like to change it up a bit and use pumpkin parmesan sauce instead of regular marinara. It is surprisingly easy to make and is so delicious. It is creamy and rich without actually being full of cream. It has the perfect mild pumpkin flavor and is the best accompaniment to a long strand linguine. Try switching up your pasta routine tonight and enjoy!

Spaghetti with Pumpkin Parmesan Sauce

1 pound long strand linguine

1 tablespoon butter

2 small shallots, diced

1 teaspoon kosher salt

1 15 ounce pumpkin puree

1/2 cup heavy cream

1 cup low-sodium chicken stock

1 cup fresh Parmesan cheese, grated

1. In a saucepan heat the butter until just melted and add the shallots. Cook the shallots until soft, about 8 minutes. Add the pinch of salt. Pour in the pumpkin puree, heavy cream, and chicken stock.

2. Stir the mixture well over medium heat until smooth and creamy, about 10 minutes. Stir in the Parmesan until just melted and serve with cooked linguine.

Balsamic Broccolini

As far as my family is concerned broccoli or broccolini can reserved any way. My little guy, Lincolns, favorite is steamed and completely plain, while his older sister, Sylvie is a roasted with parmesan cheese or butter girl. The hubs, well he likes it roasted with olive oil and salt and pepper and for me, my hands down favorite is sauted with a bit of balsamic and olive oil drizzle. I love it so much I ate it for breakfast (and not just because Im pregnant). Keep reading for my simple go to broccolini recipe

If you are feeling lazy and dont want to clean another dish, just pop your broccolini in the microwave, covered for about 2 minutes or until just tender. Sometimes I do this for a minute, then switch to the saut pan.

What youll need:

1 bunch of broccolini

2 tablespoon olive oil

1/2 to 1 teaspoon balsamic vinegar

small squirt of spicy brown mustard (1/4 teaspoon)

fresh ground pepper a few twists

1 tablespoon of olive oil for saut pan

Wash and trim broccolini. Heat olive oil in saut pan over medium and place the broccolini in with water still clinging from the wash. Cover and cook for a few minutes until it begins to get tender. Meanwhile, whisk together the rest of the ingredients. When your broccolini is done to your liking, place onto a serving dish and drizzle with the balsamic olive oil and serve. This can be served a room temperature too, its that good.
