Acorns Thanksgiving Food Craft with Kids: Peanut Butter Chocolate Acorns

The other day I saw the most adorable acorns in Bon Appetit. It reminded me of how I love to make Buckeyes around the holidays and how fun it would be to dig out that recipe and make acorn shapes with my daughter. With Thanksgiving coming up Ill be looking with some really fun things to make with her and I am thinking that these would be absolutely perfect. We can put them at place settings or on the sides of dessert plates for a fun festive look. Here is how we made these adorable acorns that taste JUST like our favorite Reeses Peanut Butter Cups!

Peanut Butter Chocolate Acorns

1 cup confectioners sugar

8 tablespoons smooth peanut butter

2 tablespoons unsalted butter, room temperature

1 teaspoon vanilla extract

1 pinch kosher salt

1/2 cup chocolate chips

A few small pretzels broken into pieces to be the acorn stems

1. In a large bowl mix the peanut butter, butter, vanilla, and salt with a wooden spoon until well combined. Then add the confectioners sugar and stir it well until is completely incorporated with the peanut butter mixture.

2. Use your hands to roll the peanut butter into small acorn-like shapes with rounded pointy ends and a flat top. Place them on a lined baking sheet and allow them to chill in the fridge for about 2 hours.

3. In the microwave melt the chocolate chips until they are completely smooth. Remove the peanut butter acorns from the fridge and dip the tops of each one into the melted chocolate so that they look like the top of the acorn. Return the acorn to the cookie sheet and press a pretzel twig into the top of each one. Allow to chill in the fridge for another hour, or until the chocolate is completely hardened. Serve!

Turkey Cookies Thanksgiving Craft with Kids: Pumpkin Kiss Turkeys

After Halloween we had a leftover bag of Hershey Kisses to use up. I decided to have some fun making our favorite Kiss cookies with my daughter but I wanted to give them a Halloween bent. Instead of making them peanut butter I made them pumpkin flavored. Then, when they came out of the oven and we put the Kiss in we also used some of our leftover candy corn to place around the base of it so it looked like a turkey! We got such a kick out of the funny festive look. It is just the cookie to make again in a couple of weeks!

Pumpkin Kiss Turkeys

cup granulated sugar, plus more for rolling

cup unsalted butter, room temperature

1 large egg

1 teaspoon vanilla extract

cup pumpkin puree

1 3/4 cups all-purpose flour

teaspoon baking powder

1 teaspoon pumpkin pie spice

1 teaspoon kosher salt

24 Hersheys Kisses

About xx Candy Corn

Preheat the oven to 350 degrees F. Line two baking sheets and set aside. Sift together the flour, baking powder, pumpkin pie spice and salt and set aside.

In an electric mixer beat the sugar and butter until fluffy. Then beat in the egg, vanilla, and pumpkin puree until smooth.

With the mixer on low add in the flour mixture until just combined. Then, pinch off pieces of the dough and form balls about 1 1/2 inches in diameter and rolls in the granulated sugar. Place each ball about 2-inchs apart on a lined baking sheet and bake for about 12 minutes, or until the cookies lightly browned around the edges.

Allow the cookies to cool for one minute. Then, place the Hersheys kisses on top of each cookie and press down slightly. Immediately form about 5 candy corn around it in a fan-like form to make it look like a turkey. Cool the cookies completely before serving.

Pumpkin Banana Bread

There are two common items in my kitchen these days: leftover pumpkin puree, roasted, smashed, you name it and banana bread. I almost always have a loaf of banana bread on the countertop toasted with peanut butter, it makes a standard breakfast around here, and is constantly pulled into service in school lunches and for after-school snacks. The other day I had only 2 ripe bananas to use (generally I use 3 in a loaf) and a container of pumpkin puree in the fridge turns out the two go deliciously together in a quick loaf.

This batter could also be baked as muffins divvy it up among paper-lined muffin cups and bake for 20-25 minutes, until springy to the touch.

If you like, sprinkle the batter with coarse sugar before baking for a crunchy, crackly top.

Pumpkin Banana Bread

2 very ripe bananas
1/2-1 cup pumpkin puree
3/4 cup sugar
2 Tbsp. canola, olive or flax oil
2 large eggs
2 tsp. vanilla
1 3/4 cups flour (I usually use half all-purpose, half whole wheat, oat or quinoa flour)
1 tsp. baking soda
1/4 tsp. salt
a handful of chopped walnuts, chocolate chips, raisins, coconut, fresh or frozen blueberries (optional)

Preheat the oven to 350F.

In a large bowl, mash the bananas, pumpkin, sugar, oil, eggs and vanilla with a potato masher dont worry about getting all the lumps out. It will look sort of cottage-cheesy.

Add the flour, baking soda and salt and stir until almost combined; add any additions and stir just until blended. Spread into a buttered 8x4 loaf pan and bake for 50 minutes, until golden and cracked on top and springy to the touch.

These easy, healthy-ingredient Walnut Coconut Maple Cups can be made in under five minutes and taste like sweet maple, rich coconut and nutty walnut. This healthy treat is a fun recipe to try for your do-it-yourself Halloween candy. You can even add a peanut butter center to make these peanut butter-style cups if youd like. Each cup is rich in virgin coconut oil, which is a popular wellness ingredient. As well as plenty of omega-3 fatty acid-rich walnuts. These creamy cups are luscious and lovely, give them a try..

Storage: Dont hand these cups out to trick-or-treaters because they will surely melt in a hot candy bag. Store in the fridge or freezer and eat at a soft room temperature state. Super luscious and creamy inside.

Easy Walnut Coconut Maple Cups
vegan, makes about 9 cups

3 Tbsp organic virgin coconut oil, melted
3/4 cup raw walnuts
2 Tbsp maple syrup
1/4 tsp salt

optional add-ins:
1/2 cup shredded coconut, raw/unsweetened
1-3 Tbsp vegan chocolate chips
1/2 tsp peanut butter per cup (inside)
1/4 tsp vanilla extract
1/4 tsp cinnamon (or some cayenne for spicy cups!)

Also:
muffin cups (about 7-8)

Directions:

1. Process your raw walnuts in a blender or food processor until a chunky meal forms.
2. Combine the walnuts with the remaining ingredients.
3. Spoon mixture into muffin liners. About 1-3 Tbsp per liner depending on how thick youd like your cups.
4. Place the cups in the freezer. They should be ready to eat in just a few minutes!

Slow Cooker Spicy Peanut Chicken Curry

With these crazy busy fall days, Im all over slow cooker recipes toss everything into the CrockPot in the morning as I assemble school lunches, and dinner is already done before Im out the door. Curries are some of my favorites especially those enriched with peanut butter. Made with skinless chicken thighs, this dish is quick and flavorful, takes under 5 minutes to throw together, and makes a delicious meal served over rice. It also freezes well if you have a large slow cooker, double the recipe and freeze leftovers for an emergency meal on a cold day down the road.


If youre going wheat or gluten-free, use rice flour it simply thickens the sauce as it cooks.

Slow Cooker Spicy Peanut Chicken Curry

Adapted from Crock-Pot.ca

8 skinless, boneless chicken thighs
1 large thin-skinned potato, cut into chunks
1 onion, chopped
1 Tbsp. flour
1 19 oz (540 mL) can diced tomatoes, with their juices
1/3 cup peanut butter, smooth or crunchy
a squirt of sriracha or chili sauce (optional)
1 clove garlic, crushed
1 Tbsp. soy sauce
1/2 tsp ground cumin
1 tsp chili powder
1 tsp brown sugar
1 tsp turmeric (optional)
Chopped fresh cilantro and/or salted peanuts, for garnish

Place the chicken in your CrockPot and arrange the diced potatoes and onion around the edge. Sprinkle with flour.

Add the tomatoes, peanut butter, sriracha, garlic, soy sauce, cumin, chili powder, brown sugar, turmeric (if you have it), cover and cook on low for 6 hours.

Sprinkle with chopped cilantro and/or peanuts and serve over steamed rice. Serves 4-6.

When it comes to eating apples there are typical ways to enjoy them (apple pie, sliced and dipped and peanut butter), and then there more creative ways. Today I am here to share some of those more creative ways because I think this is the time of year, when apples are in abundance, that you really want to know fun ways to eat them. My personal favorite of this bunch are the baked apple fries. I swear, I never wouldve thought to make apples into french fries but they are totally delicious! When your kids have been diagnosed with food allergies, its sometimes tough to navigate recipes that call for flour, eggs, dairy, or whatever it is youre trying to avoid. Baking can become tricky; often recipes for cakes, cookies, muffins and loaves rely on flour and eggs for their structure, and butter for tenderness and flavor. Here are a few tricks that will help you adapt your favorite recipes to accommodate any dietary restrictions, and some new cookie, muffin, cake and pie recipes that everyone will enjoy.


The ingredients you use depend largely on what it is youre baking, and the texture you want to achieve. For example, adding liquid to a cookie recipe will give it a cakey texture, which is better suited to cakes and muffins than something you want to be dense and chewy or crumbly and shortbreadlike. Here are a few ingredient swaps to try:

Cakes, muffins and quick breads: All of the above work wonderfully with canola or another neutral-tasting vegetable oil, so if a recipe calls for butter or particularly for melted butter you can make the switch cup for cup. Eggs act as binder and leavening agent in these sorts of recipes, and are more tricky to replace if a recipe calls for 1-2 eggs, try an egg replacement (available at most grocery stores, and not the same as egg substitute, which comes in cartons in the dairy case). You can also try mixing 1 Tbsp. ground flax seed with 3 Tbsp. warm water; let stand 1 minute before using and use in place of the egg in a recipe this is a common substitute. For the wheat flour, substitute a gluten-free blend; most often you cant rely on a single gluten-free flour to give cakes, muffins and loaves proper structure.

Cookies: Because they rely on butter as much for flavor as texture, try swapping a dairy-free butter substitute. Dense squares like brownies are easiest to adapt; with very little flour in them, they dont rely on gluten for their structure. Try gluten-free oat flour, quinoa flour or a gluten-free flour blend in your recipe if youre aiming for wheat or gluten-free.

Pastry: This one is tricky. Shauna of Gluten-free Girl has come up with a brilliant pastry crust, as has Lauren of Celiac Teen. If youre just going dairy-free, make yours using lard or shortening.
