Coffee Cake Thanksgiving Brekkie: Pumpkin Cinnamon Streusel Coffee Cake

I am all about breakfast baked goods these days. It must be what the baby is craving! One of the things we made and loved lately was this awesome pumpkin coffee cake muffins with a delicious cinnamon streusel topping. We adored the moist texture and sweet pumpkin flavor. Eating it made me think they would be perfect for Thanksgiving morning. I can just imagine how wonderful they would be served up in a warm bread basket with cups of coffee to start of the day.

Pumpkin Cinnamon Streusel Coffee Cake Muffins

adapted from Williams-Sonoma

Streusel:

1/3 cup all-purpose flour

cup packed light brown sugar

1 teaspoon ground cinnamon

kosher salt

stick cold butter cut into small pieces

Cake:

1 cups all-purpose flour

2 teaspoons baking powder

teaspoon baking soda

2 teaspoons ground cinnamon

1 teaspoon ground ginger

teaspoon nutmeg

teaspoon kosher salt

1 stuck unsalted butter, room temperature

cup granulated sugar

2 eggs

cup pumpkin puree

cup sour cream

1. Preheat the oven to 350 degrees F. Butter and flour a 9-inch springform pan and set aside.

2. Make the streusel by combining the flour, sugar, cinnamon, and salt in a small bowl. Then use your fingers to pinch in the butter until it is pea-sized. Set aside.

3. To make the cake, beat the butter and sugar together in a large bowl. Then beat in the eggs, pumpkin puree and sour cream.

4. Sift together the flour, powder, soda, spices and salt and a small bowl and shake this into the pumpkin mixture while the mixer is on low-speed until just combined.

5. Pour the batter into the prepared pan and pack the streusel filling on top. Bake for 45 to 50 minutes, or until a cake tester inserted comes out clean. Allow to cool for at least 10 minutes in the pan before releasing the sides and allowing to cool completely.

After Halloween we had a leftover bag of Hershey Kisses to use up. I decided to have some fun making our favorite Kiss cookies with my daughter but I wanted to give them a Halloween bent. Instead of making them peanut butter I made them pumpkin flavored. Then, when they came out of the oven and we put the Kiss in we also used some of our leftover candy corn to place around the base of it so it looked like a turkey! We got such a kick out of the funny festive look. It is just the cookie to make again in a couple of weeks!

Pumpkin Kiss Turkeys

cup granulated sugar, plus more for rolling

cup unsalted butter, room temperature

1 large egg

1 teaspoon vanilla extract

cup pumpkin puree

1 3/4 cups all-purpose flour

teaspoon baking powder

1 teaspoon pumpkin pie spice

1 teaspoon kosher salt

24 Hersheys Kisses

About xx Candy Corn

Preheat the oven to 350 degrees F. Line two baking sheets and set aside. Sift together the flour, baking powder, pumpkin pie spice and salt and set aside.

In an electric mixer beat the sugar and butter until fluffy. Then beat in the egg, vanilla, and pumpkin puree until smooth.

With the mixer on low add in the flour mixture until just combined. Then, pinch off pieces of the dough and form balls about 1 1/2 inches in diameter and rolls in the granulated sugar. Place each ball about 2-inchs apart on a lined baking sheet and bake for about 12 minutes, or until the cookies lightly browned around the edges.

Allow the cookies to cool for one minute. Then, place the Hersheys kisses on top of each cookie and press down slightly. Immediately form about 5 candy corn around it in a fan-like form to make it look like a turkey. Cool the cookies completely before serving.

Theres this thing I have about pumpkin. I LOVE it the freak like crazycakes. Its just so gol-durned good. And when autumn hits, anything pumpkin that I can put in my mouth is game for utter devourment. Dont judge. Its a pumpkin thing.

So, when my bestie, Eldon and I were pulling together videos for this months HisXHers episodes, I knew I had to take my traditional Melted Ice Cream Cocoa and turn it into a Pumpkin flavored hot toddy. You wont believe how good this recipe is, how fun it is to make, or how deeelish it tastes with a shot of rum. Hello, happiness. Pumpkin is thy name.

Melted Ice Cream Pumpkin Cocoa
4 tablespoons butter
1/2 cup sugar
1 pint pumpkin ice cream (vanilla will also work)
1/2 cup pumpkin puree
1 tablespoon pumpkin pie spice
5 cups water
1/4 teaspoon pure almond extract
4 shots coconut rum, if desired
Whipped cream
caramel Ice cream Sauce

In a medium pot, whisk together the butter, sugar, and ice cream over medium high heat until melted. Add the pumpkin puree and pumpkin spice. Whisk in the water, one cup at a time until your favorite texture/flavor is achieved. Heat just until steaming. Pour into mugs with a shot of rum, ifn you feel like rum. Garnish with whipped cream and caramel drizzle. Enjoy immediately.

Pumpkin Banana Bread

There are two common items in my kitchen these days: leftover pumpkin puree, roasted, smashed, you name it and banana bread. I almost always have a loaf of banana bread on the countertop toasted with peanut butter, it makes a standard breakfast around here, and is constantly pulled into service in school lunches and for after-school snacks. The other day I had only 2 ripe bananas to use (generally I use 3 in a loaf) and a container of pumpkin puree in the fridge turns out the two go deliciously together in a quick loaf.

This batter could also be baked as muffins divvy it up among paper-lined muffin cups and bake for 20-25 minutes, until springy to the touch.

If you like, sprinkle the batter with coarse sugar before baking for a crunchy, crackly top.

Pumpkin Banana Bread

2 very ripe bananas
1/2-1 cup pumpkin puree
3/4 cup sugar
2 Tbsp. canola, olive or flax oil
2 large eggs
2 tsp. vanilla
1 3/4 cups flour (I usually use half all-purpose, half whole wheat, oat or quinoa flour)
1 tsp. baking soda
1/4 tsp. salt
a handful of chopped walnuts, chocolate chips, raisins, coconut, fresh or frozen blueberries (optional)

Preheat the oven to 350F.

In a large bowl, mash the bananas, pumpkin, sugar, oil, eggs and vanilla with a potato masher dont worry about getting all the lumps out. It will look sort of cottage-cheesy.

Add the flour, baking soda and salt and stir until almost combined; add any additions and stir just until blended. Spread into a buttered 8x4 loaf pan and bake for 50 minutes, until golden and cracked on top and springy to the touch.

We are big fans of spaghetti and meatballs around here. When fall rolls around I like to change it up a bit and use pumpkin parmesan sauce instead of regular marinara. It is surprisingly easy to make and is so delicious. It is creamy and rich without actually being full of cream. It has the perfect mild pumpkin flavor and is the best accompaniment to a long strand linguine. Try switching up your pasta routine tonight and enjoy!

Spaghetti with Pumpkin Parmesan Sauce

1 pound long strand linguine

1 tablespoon butter

2 small shallots, diced

1 teaspoon kosher salt

1 15 ounce pumpkin puree

1/2 cup heavy cream

1 cup low-sodium chicken stock

1 cup fresh Parmesan cheese, grated

1. In a saucepan heat the butter until just melted and add the shallots. Cook the shallots until soft, about 8 minutes. Add the pinch of salt. Pour in the pumpkin puree, heavy cream, and chicken stock.

2. Stir the mixture well over medium heat until smooth and creamy, about 10 minutes. Stir in the Parmesan until just melted and serve with cooked linguine.

Looking for a new way to start your fall day? Bake up a batch of these moist pumpkin-bran muffins and youre good to go! Nutrient-dense pumpkin puree makes a great addition to most any muffin; moist and sweet, its rich in fiber and beta-carotene, low in calories. Think of it as adding applesauce or mashed banana, only with more good things to go in. Pumpkin and bran make a delicious combination, providing a double whammy of fiber to help keep you satisfied until your next meal.

Of course any stir-in could take the place of raisins here; try chopped walnuts or pecans, fresh or frozen blueberries or raspberries, or even a small chopped apple.

Pumpkin Bran Muffins

Adapted from Kevin is Cooking

1 1/2 cup all-bran cereal
1/2 cup boiling water
1/4 cup vegetable oil
1 large egg
3/4 cup sugar
3/4 cup pumpkin puree
1 1/4 cups all purpose flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp salt
1 cup buttermilk
1 cup raisins

Preheat oven to 400F. In a large mixing bowl pour boiling water over 1/2 cup of the cereal, stir in the oil and set it aside. Once cool, stir in the egg, sugar, pumpkin puree and remaining cereal.

In a small bowl, stir together the flour, baking powder, baking soda and salt. Add to the bran mixture in 3 additions alternately with the buttermilk in two additions. Stir in the raisins.

Divide between 12 paper lined or greased muffin tins and bake for 20 minutes, or until springy to the touch. Makes 12.

When fall comes around I start stocking up on canned pumpkin like crazy. I love adding it to all of my favorite sweet treats. To me pumpkin is really, truly the epitome of fall flavor. Since canned pumpkin is the most common kind of pumpkin I have on hand I always look for recipes that call for it. Pumpkin Spice Beverage Variations

This time of year I think we can all admit to falling under the Pumpkin Spice spell. Lattes, muffins, cakes, hot cereal and more all magically infused with those sweet fall flavors, lovingly known a Pumpkin Spice. The most popular of the pumpkin spice offerings is probably the latte or the Pumpkin Spice beverage in general. And when you are not shelling out money to Starbucks, you can easily re-create a warm mug of pumpkin-y bliss at home. Here are a few easy and delicious variations for Pumpkin Spice Beverages..

The Basics. The basic way to blend some pumpkin spice flavor into your beverage is by adding pumpkin puree + pumpkin pie spice. You can add them to taste. For beverages, you may want to look out for pumpkin puree from a box. See this post for details.

Tea. Use black or chai spiced tea instead of coffee beans for your latte. Pumpkin Spice Chai Latte Recipe.

Spicy. Add a few dashes of simple cayenne to your latte to give it a bold, warm, spicy edge.

Maple. Add extra fall flavor by sweetening your pumpkin spice sip with maple syrup.

Chocolate. You might not think pumpkin and chocolate pair well together but they certainly do! Try a pumpkin spice hot chocolate or mocha and see if the flavors entice your taste buds!

Ice it. Toss your pumpkin spice latte over some ice for a cool version fit for a sunny fall day, or simply too much time lounging in front of a crackling fall fireplace.

Pumpkin season is just about here and that means you will most likely be in the kitchen whipping up pumpkin pies, pumpkin shakes, pumpkin spice lattes, pumpkin muffins and more. Well when you arrive at the pumpkin section in your grocery store you may notice a few options. Both boxed and canned pumpkin varieties on sale. So what are the differences between the two pumpkin options? And when is it best to use one over the other? Here are a few things to help you make your decision and help your pumpkin recipes turn out their best!..

The Basics: When it comes to pumpkin puree (nothing added, 100% pumpkin) there are two options. Boxed or canned. Both contain pure pumpkin puree, but there are also a few differences.

The Differences:

* Most canned pumpkin contains 50 calories per 1/2 cup serving, while the boxed varieties usually contain around 40 calories. This is because there is more moisture in most boxed varieties.
* The canned varieties are usually a bit on the firm side with a dry consistency. While the boxed varieties are usually much more moist and liquid you can actually pour them right out of the box almost like an applesauce consistency.

When to Use:

* For drinks like pumpkin lattes where you will be dissolving the pumpkin into liquid, you may want to reach for the boxed varieties since they dissolve very well without any clumping. The canned varieties tend to clump up a bit more due to their dryness.

* For dips where you want a thick consistency and dont want to do a lot of thickening up with added ingredients go with the canned since it is naturally much more dip-like and thick.

* For pies you can really use either variety however the boxed variety will make for a more watery filling and thus may take a longer time for yoru pie to bake and set. But this also depends on your recipe. You just want to be aware that most pumpkin pie recipes will probably assume that you are using canned pumpkin. So if you do use the boxed variety and your filling seems a bit on the wet side you will know why.

Boxed vs. Canned: Why Boxed? The short answer: BPA concerns. Many studies including a review by the New York Times have chatted about the amount of BPA that is lurking in canned goods. That includes canned pumpkin. This is one reason why you may want to seek out BPA-free cans of just go with the boxed purees. Or if all else fails (and you have time) make your own pumpkin puree at home from a whole pumpkin!
