Zombie Banana French Toast

Add some spooky-deliciousness to your french toast breakfast with this green Zombie French Toast with sweet banana flavor and a nice dose of fluffy zombie white powdered sugar over top. This easy recipe is infused with real bananas, cinnamon and maple syrup flavor. Natural green color too

The banana and non-dairy milk make the soaking mixture nice and thick so no eggs are needed for this recipe. Add cinnamon to taste. Serve alongside fresh fruit and some extra zombie juice on the side if desired.

Zombie Banana French Toast
vegan, serves 4

4 large slices or 8 small slices day-old bread
banana mixture

banana mixture zombie juice
1 1/2 bananas, very ripe
1/2 1 cup non-dairy milk (almond or soy work best)
1 tsp maple or agave syrup
a few dashes of cinnamon
1 handful baby spinach
optional: pinch of fresh orange zest

to cook: 1-2 Tbsp Earth Balance Buttery Spread

over top: powdered sugar, organic
Directions:

1. Blend the zombie banana mixture in a blender until smooth and pale green.
2. Soak the bread in the green banana mixture.
3. Heat the Earth Balance in a hot saute pan. Add i the soaked wet bread.
4. Cook about 3 minutes on each side you can add an extra drizzle of green liquid about aminute before removing from the pan to leave a nice green pop of color on the surface.
5. Serve with some powdered sugar sprinkled over top a side of green zombie juice too.

Apple Cinnamon Dutch Baby Pancake

Sundays were made for sweet treats like Dutch Baby Pancakes. These pancakes are fun, fast and easy to make. Just a few ingredients thrown into a pan (I like using a cast iron skillet,) bake for 15 minutes and voila! A slightly sweet, puffy, airy pancake!

Ingredients:

  • 1/2 stick of unsalted butter
  • 1 apple, peeled cored and sliced
  • 1 tsp cinnamon
  • 3/4 cup of whole milk
  • 3/4 cup flour
  • 4 TBSP organic sugar
  • 3/4 tsp organic real vanilla extract
  • 1/2 tsp salt
  • confectioners (powdered) sugar

Method:

Preheat oven to 450 degrees.

In a 10 inch cast iron skillet, melt the butter. Add apple slices and cook for 5 minutes until tender over medium low heat. Take 2 tablespoons of the melted butter and add it to a blender pitcher.

Sprinkle cinnamon over cooking apples. Turn apples over to make sure they are getting soft on all sides.

Add remaining ingredients to blender and mix until just combined.

Pour batter over apples and place skillet in the oven. Cook for about 17 minutes or until pancake is puffy and lightly golden. The pancake will collapse after you remove it from the oven. Dust with powdered sugar (unfortunately, I didnt realize I was out of powdered sugar until after I made this so the pancake in the photo doesnt have a pretty dusting of sugar on it.)

Serve immediately.
