Red Velvet cupcakes have been all the rage for the past few years, but I cant seem to get past the use of red food coloring generally at least a tablespoon, and sometimes an entire bottle of it in one recipe. Ive often wondered if beets could take their place, adding color as well as nutrients and fiber, and leave it to Catherine McCord of the popular kid-food blog, Weelicious, to figure it out. Her brand-new cookbook, Weelicious: One Family. One Meal., launches on September 18th. I cant wait to see it!

Chocolate Velvet Beet Cupcakes

Now and then, we love taking the kids by our favorite neighborhood cupcake store to enjoy a special treat. Of course their eyes are always drawn to the most colorful cupcakes in the display case. My kids may have no idea how they actually taste, but put something like a red velvet cupcake made with crimson food dye in front of them and their immediate response is, That one. These chocolate velvet cupcakes have a rich chocolate flavor, and while they arent as artificially red as cupcakes that use chemical food dyes, they and their icing gets their bright reddish-pink color from a surprising, delicious, and 100% natural guest: roasted beets. And the best part is that youd never know, since theres no beet flavor in them. Just deep, rich chocolate!

I offer two ingredient versions for the frosting, one white and one a delightful beet-stained pink! Excerpted from Weelicious: One Family. One Meal. by Catherine McCord.

1/3 cup cocoa powder
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
3/4 cup sugar
1/2 teaspoon salt
2 large eggs
1 cup milk
1/3 cup vegetable or canola oil
1 large beet, roasted, cooled, peeled, and pureed (about cup)
2 teaspoons pure vanilla extract

1. Preheat the oven to 350F.

2. Sift the cocoa powder, flour, baking powder, baking soda, sugar, and salt into a large bowl.

3. In a separate bowl, whisk together the rest of the ingredients.

4. Slowly add the dry ingredients into the wet, stirring to combine thoroughly as you go.

5. Pour about 1/3 cup batter into paper-lined muffin cups and bake for 25 minutes, or until a toothpick comes out clean.

6. Cool thoroughly, frost, and serve. The cupcakes will keep in a covered container on the counter for 1 day, or in the fridge for up to 3 days, or you can freeze them for up to 3 months. Makes 14 cupcakes.

Cream Cheese Frosting

For white frosting:
One 8-ounce package cream cheese, room temperature
1/2 cup (1 stick) unsalted butter, room temperature
1/4 cup powdered sugar
1 teaspoon pure vanilla extract

For pink frosting:
One 8-ounce package cream cheese, room temperature
1/2 cup (1 stick) unsalted butter, room temperature
1/2 cup powdered sugar
1 medium beet, roasted, cooled, peeled, and pureed (about cup)
1 teaspoon pure vanilla extract

1. Place all the ingredients in a mixer and beat on medium-high speed until fluffy.

2. Spread the frosting onto cooled cupcakes.

In the world of cooking, making a quesadilla isnt difficult or complicated. But when you are trying to feed the kids a healthy breakfast in the morning and limit the clean-up a quesadilla with eggs can get a little tricky. Catherine McCord of the wonderful website Weelicious.com decided to make a breakfast quesadilla that wouldnt fall apart and only takes five minutes to make.

Catherine decided to cook her eggs like in an omelette rather than scramble the eggs. She cooks the eggs, covers them with a tortilla and then flips them onto a plate. The result is a perfectly flat shape that fits beautifully between two tortillas. The eggs stay nestled in the quesadilla instead of ending up on floor or your lap. You can add anything to the filling. You could even sneak in some vegetables between the layers of egg and cheese. If Im making this for me Im adding some sliced Hatch green chiles!

Earlier this month, I shared a recipe for simple yet healthy two ingredient yogurt pops by popular chef and food blogger, Catherine McCord of Weelicious.com. That recipe is a sample of the types of kid-friendly yet very healthy recipe ideas youll find on Weelicious. Her site has become the online destination for parents wanting to encourage healthy family meals. And now Catherine has a new cookbook coming out that will probably become the bible for parents who just need some guidance on how to keep their familys food fresh, nutritious and delicious!

If Catherine looks familiar its because she is a former top model and actress whose image graced many magazine covers. As a model, she traveled the world and loved to experience new culinary discoveries on her trips. She took her passion for food to the next level by attending culinary school. When she became pregnant, she wanted to learn more about healthy and creative menus for children but didnt find many resources online. That motivated Catherine to create Weelicious.com. With her two young children as kitchen helpers and recipe-testers, she developed and shared hundred of kid-friendly recipes that were enjoyed by the entire family. As her popularity and audience grew, she started work on her first cookbook. The result is a book loaded with tips, pantry checklists and 70 new recipes that arent on her website.

If you havent discovered Greek yogurt in your house, its time. We started buying it a few years ago and we rarely buy anything else. My favorite is the Noosa brand made here in Colorado. Once youve had their honey flavored yogurt, youll be a lifetime fan. My son eats a lot of yogurt but it took him awhile to develop a taste for the rich and creamy Greek yogurt. But I find that hell eat just about anything if it is frozen. That is one reason why I love this very simple two ingredient recipe for yogurt pops by Catherine McCord or Weelicious.com

Catherine is the undisputed queen of interesting, very healthy, family recipes. She is truly a master at developing wonderful dishes that her kids will actually eat. Ive been a fan (and blogging friend) of Catherines for several years and I am always in awe when I see her young children eating an enviable amount of veggies and raw organic foods. Granted, my family eats pretty well but Catherine puts our daily routines to shame! I believe the reason she is so successful is shes made healthy eating a lifestyle from her childrens infancy. Her passion to always keep the foods fresh and interesting spawned her fun and creative blog, Weelicious.com and a huge following of appreciative moms. She has included many of her most popular recipes (140 of them to be exact) in a new cookbook that will be available this September.

Now back to those yogurt pops! Weve all purchased frozen yogurt tubes at the grocery store but these are more fun to make and include a healthier ingredient to add some sweetness honey.
