Lava Flow Ho Ho Cocktail

For those who arent big on the peppermint-flavored or white chocolate drinks that are popular over the fall and winter holidays, I nabbed a favorite recipe from The Westin Resort & Spa in Los Cabos that lends a fun, tropical flair to the colors and flavors of the holiday season. Try whipping this beautiful cocktail up for your next party, or serving it once all the kiddos are tucked in their beds.

In a tall, frozen drink glass, place:
1-2 generous dollops of thawed strawberry pulp

In a blender, combine:
2 tablespoons rum
3 tablespoons pineapple juice
2 tablespoons coconut cream
1 tablespoon milk
1 cup ice

Pour blended mixture into the glass and top with another generous dollop of strawberry pulp. Garnish with a fresh pineapple wedge and serve with a long straw.

Was your family an Old Farmers Almanac sort of family? As the granddaughter of small-town farmers, I remember seeing my grandmas copy of the Old Farmers Almanac sitting in the kitchen, right and ready for easy reference. The book has been published continuously since 1792, making it the oldest continuously published book in America. If you havent yet found a reason to get on board with OFA in this modern age, perhaps youll fall in love with the classic when you check out their new Everyday Baking cookbook, by celebrated baker, winner of the Julia Child Cookbook Award, and longtime Almanac collaborator Ken Haedrich.

Chocolate Mud Bars
From The Everyday Baking Cookbook, page 54

1 cups graham cracker crumbs
3 tablespoons packed light-brown sugar
teaspoon cinnamon
Pinch of salt
5 tablespoons unsalted butter, melted

cup (1 stick) unsalted butter
6 ounces semisweet chocolate, coarsely chopped
cup sugar
2 large eggs, at room temperature
teaspoon of vanilla extract
cup cake flour
1 cup coarsely chopped walnuts

Butter an 8-inch square baking pan and set aside.

For crust: Combine the graham cracker crumbs, brown sugar, cinnamon and salt in a medium bowl. Mix well with your hands. Add the melted butter, stir well with a fork, then rub the ingredients together well with your fingers until thoroughly mixed. Press the mixture evenly in the prepared pan to form a level layer on the bottom with a lip extending about inch up the sides of the pan. (Do not prebake the crust).

For filling: Combine the butter and chocolate in the top of a double boiler over not-quite-simmering water. When melted, whisk to smooth, then remove the pan from the heat. Scrape the chocolate into a medium bowl and cool to lukewarm. Preheat the oven to 325oF. Whisk the sugar, eggs, and vanilla into the lukewarm chocolate. Stir in the cake flour, mixing until smooth. Stir in the walnuts. Scrape the batter over the crust and smooth with a spoon. Bake on the center oven rack for 35 minutes only no longer. Cool on a rack. Refrigerate an hour or so before slicing. Serve at room temperature. Makes 16 bars.

With autumn in the air, the opportunities to gather friends and family for cozy holiday parties and warm, wine-bibbed nights become ever more plentiful. Ive discovered that having a few basic ingredients on hand, which can be pulled into an incredible cheese plate for spur of the moment gatherings, or those last-minute, I-totally-forgot-to-grab-something-to-take-to-the-party moments is one of the best ways I can ensure low-stress gatherings this time of year.

For the Pantry:

  • 1 round good-quality brie cheese (buy at Costco for an incredible price)
  • 1 jar jalapeno-raspberry jelly, plum jelly, or your favorite
  • 1 box thin crackers (like Crispbread)
  • Various raw or candied nuts (walnuts, almonds, pecans)
  • Various dried fruits (cherries and apricots are my favorite)
  • Hard-boiled eggs (try whipping them with a ripe avocado for extra flavor and less mayo)

For the Plate:

  • 60 minutes before serving time, prepare the Deviled Eggs.
  • 15-20 minutes before, slice cheese and place on platter with crackers, nuts, fruit.
  • Serve and enjoy!

Every Halloween I do a segment on spooky/scary/gory Halloween eats and treats for Breakfast TV. This morning, I made a couple racks of ribs easy to place on a cutting board looking like a ribcage to hack into with a cleaver. This is what our little goblins will be gobbling up before they head out trick or treating tonight.

Pre-roasting ribs allows the tough connective tissues to break down, making them fall-off-the-bone tender. The barbecue sauce and salsa brushed on top looks extra gory, if you present it that way, but really its finger-lickin good.

Bloody Roasted Ribcage

your favourite dry rub (optional)

2 Tbsp. paprika
1 Tbsp. chili powder
1 Tbsp. ground cumin
1 Tbsp. brown sugar
1 Tbsp. salt
2 tsp. freshly ground black pepper
1 tsp. oregano

2 racks spareribs, trimmed of excess fat
1/2 cup barbecue sauce
1/4 cup salsa

If you want to use the dry rub, combine all the ingredients for it and rub the ribs all over with the mixture, covering both sides. Let them stand at room temperature for an hour, or wrap them well in plastic and refrigerate them for up to 24 hours to intensify the flavors. If you arent using the rub, just sprinkle the ribs with salt and pepper. Keep any extra rub in an airtight container it will last for about a year before it starts to lose its punch.

Preheat the oven to 300F. Place the ribs meat side up on a rimmed baking sheet, and cover the pan completely with foil. Bake them for 2 1/2 hours. (If you like, cool and refrigerate them at this point for a day or two.) Remove the foil and slather the ribs generously with barbecue sauce and salsa. Finish in the oven at 375F for 15-20 minutes, or do them on the grill. Serve whole, on a carving board, with a knife wedged between two ribs

Serves 8.

Here is a thought about all that Halloween candy drink it instead of eat it! Thats right, we all know how well things like chocolate and caramel can dissolve in hot liquids so why not take advantage and stir some into your favorite hot chocolate this season to use some of it up! So far Ive come to love a drizzle of melted caramel in top of my hot chocolate with a Kit Kat bar as swizzle stick. When the chocolate has melted off I crush up the remaining cookie wafer over the top. I think this would also taste wonderful with chopped Snickers Bars on top, or Milky Way, or even Reeses Peanut Butter Cups!

Halloween Candy Bar Hot Chocolate

2 cups of your favorite homemade hot chocolate

2 or 3 snack-size pieces of your favorite candy

Whipped Cream

1. Make the homemade hot chocolate according to direction and make sure it is PIPING HOT!

2. Chop the candy you want in your hot chocolate into very small pieces. Stir half right into the hot chocolate. Then, top the hot chocolate with whipped cream and sprinkle the remaining candy on top. Use things like Kit Kat Bars or Twix Bars as swizzle sticks!

It is no secret that groceries seem to get more expensive every single year. The problem is that this meaning feeding a family only continues to get pricier even if your income doesnt rise! I shop for groceries so often probably more than the average person and have a few tips on easy ways to save at the grocery store. This isnt complicated or crazy rocket science, but they will definitely help you save a few bucks and every bit adds up!

Tip 1: Coupons!

- Every single grocery store I shop at has a leaflet of coupons and/or they can be printed out online. I always clip coupons before I settle on my final grocery list. If something you like is on sale than buy it and swap it out for something that isnt on sale and you can buy later.

Tip 2: Buy in Bulk

- The bulk aisle is a great place to save money. By purchasing only what you need and avoiding packaging you save money and increase yield. Who cares if you bring home dried couscous in a bag instead of a fancy box? It is still the same thing!

Tip 3: Stock Up on Staples

- When you see something that is non-perishable like dried soup or canned tomatoes or dry pasta on sale than by all means stock up! As long as you know youll eat it within 6 months and it can be stored in your kitchen cabinets it is worth buying more than you need and saving money in the long run.

My sister and her husband just moved to Los Angeles from Amsterdam, I am so excited to have some family living so close! She is happy to be back to her U.S. roots, but her hubs is British and has never lived state side so hes a bit more nervous about life here. It also freezes well, so you can have dinner taken care of on a cold night down the road. If you dont have pumpkin, try swapping other winter squash, like acorn or butternut.

Easy Curried Pumpkin Soup

Adapted from AllRecipes

6 cups chicken or vegetable stock
1 small pumpkin, peeled and cubed (about 4 cups)
1 onion, chopped
1 tsp. curry powder or paste
1 garlic clove, crushed
salt and pepper
1/2 cup cream or coconut milk
plain yogurt or sour cream, for serving (optional)

In a small pot, heat the stock, pumpkin, onion, curry paste, garlic, salt and pepper. Bring to a boil, reduce heat to low, and simmer for 20-30 minutes, or until the pumpkin is very soft.

Puree the soup in batches in a blender or with a hand-held immersion blender right in the pot. Stir in the cream or coconut milk. Serve hot, topped with plain yogurt or sour cream, if you like. Serves 4-6.

Three Ingredient Vegan Caramel Apples

I recently made an amazingly easy-delicious vegan caramel apple and hope everyone who loves caramel apples gives this coconut milk (instead of dairy milk or cream) version a try. I was shocked to find that veganizing caramel sauce is not only super easy, but also super delicious. And the best part if that your can still use minimal ingredients. Just three to be exact. For a more extensive recipe using crushed walnuts, chocolate, sea salt and some vanilla, visit my recipe on Healthy. Happy. Life. But for a bare bones recipe that works like a dream, try this one below.

Three Ingredient Caramel Apples
vegan, makes one large caramel apple

You will need three ingredients:

1 apple (washed + dried well)
2 organic granulated sugar
3 coconut cream (from full fat coconut milk*)

*coconut cream can be obtained by scooping the firm white stuff off the top of a can of coconut milk chill the can first for easiest scooping)


1. Add 3-4 Tbsp of sugar to a saute pan, over high heat.
2. Add 2 Tbsp coconut cream. Melt and stir briskly until the mixture is bubbling. Do this for about a minute or two until all the sugar is dissolved.
3. Reduce heat to low and stir for another minute.
4. Turn off heat, pour mixture into a small bowl and place in the fridge until is chills to a sticky state. Usually 20 minutes.
5. Dip apple in the caramel and your apple is done!

Theres this thing I have about pumpkin. I LOVE it the freak like crazycakes. Its just so gol-durned good. And when autumn hits, anything pumpkin that I can put in my mouth is game for utter devourment. Dont judge. Its a pumpkin thing.

So, when my bestie, Eldon and I were pulling together videos for this months HisXHers episodes, I knew I had to take my traditional Melted Ice Cream Cocoa and turn it into a Pumpkin flavored hot toddy. You wont believe how good this recipe is, how fun it is to make, or how deeelish it tastes with a shot of rum. Hello, happiness. Pumpkin is thy name.

Melted Ice Cream Pumpkin Cocoa
4 tablespoons butter
1/2 cup sugar
1 pint pumpkin ice cream (vanilla will also work)
1/2 cup pumpkin puree
1 tablespoon pumpkin pie spice
5 cups water
1/4 teaspoon pure almond extract
4 shots coconut rum, if desired
Whipped cream
caramel Ice cream Sauce

In a medium pot, whisk together the butter, sugar, and ice cream over medium high heat until melted. Add the pumpkin puree and pumpkin spice. Whisk in the water, one cup at a time until your favorite texture/flavor is achieved. Heat just until steaming. Pour into mugs with a shot of rum, ifn you feel like rum. Garnish with whipped cream and caramel drizzle. Enjoy immediately.

Do you need a last minute Halloween treat? Ive got the perfect snack, ghost pretzels! I made these while the kids were in school and served them up with apple bites for an after school snack. I made coolest mom of the day award! They are so easy to make, that I let the kids make their own once they gobbled up these. Take the jump for the spooky recipe

Halloween Ghost Pretzels

Pretzel sticks about 20

1/2 bag white chocolate chips

10 semi-sweet chocolate chips

Microwave the white chocolate chips for 1 minute on half power, stir and heat for 10 second intervals until smooth. Dip the pretzels and lay on parchment paper or stick into a bowl filled with grains or rice to keep upright. Allow to cool and harden. Head the semi-sweet chocolate chips for 10 second on half power, stir and heat again for 5 second or until melted and smooth. Using a toothpick, dip into melted chocolate and form eyes and a mouth. Let harden and serve.

Zombie Chili

2 tablespoons olive oil
4 cloves fresh garlic, finely chopped
1/2 white onion
1 pound bockwurst sausage, sliced
1 can cream of chicken soup
1 can chicken broth
1 bottle salsa verde salsa
2 cans butter beans, drained
1/2 cup plain Greek yogurt
fresh chopped cilantro
black tortilla chips
In a large pot, heat olive oil over medium high heat. Add the garlic, onion, and sliced bockwurst to the pot. Cook for 3-5 minutes, or just until the sausage is browned. Werthers Caramel Ginger Popcorn

1 bag of lightly salted microwave popcorn popped

2 tablespoons butter

25 Werthers original chewy caramels

2 teaspoon fresh grated ginger (heres the best way to peel ginger)

Preheat oven to 225 degrees. Lightly spray a baking sheet. Pour the popcorn into a large bowl, remove any un-popped kernels. Place butter in a small sauce pan and add the fresh ginger. Cook over medium low heat until melted, add the 25 caramel pieces. gently stir until caramel is completely melted and blends with the butter to form a smooth mixture. Pour half the caramel over the popcorn and stir, then pour the other half of the caramel and continue to stir until evenly dispersed. Pour onto baking sheet and spread out. Bake for 15 minutes, stir, then bake for another 15 minutes. Remove, allow to cool just enough to eat. Store in an airtight container.

There is something that is so warm and comforting about a coffee cake in the fall. I love baking one up nice and fresh on a weekend morning and nibbling on it all day. I also love bringing them to friends when they host parties or brunches who doesnt like a fresh cake topped with cinnamon streusel to grace their table? Here is one of my favorite coffee cake recipes. It contains bright citrus zest, warm cinnamon and features a copius topping of brown sugar and cinnamon.

The secret to an unbelievable pork belly is time. Cooked low and slow for hours, the fat melts into the braising liquid and the flavors permeate the meat beautifully. We serves our belly with slow-scrambled eggs and fresh biscuits, but meat this good is excellent on just about anything.

When the weather begins to get chilly and nights drop in earlier, I crave freshly baked bread. Since pasta is common on our dinner table, I decided to bake a batch of focaccia a simple yeast bread poked on top, drizzled with oil and sprinkled with fresh rosemary and coarse salt. Use this recipe as a blank canvas like doughy pizza without the cheese, focaccia can be topped with anything from olives to cherry tomatoes or try a sweet version for breakfast, topped with fresh plums or berries, which go well with rosemary too.

Focaccia is a fun project for kids to get involved with stirring and kneading the dough, then watching it rise.. and poking the top with their fingers before sprinkling over toppings is the most fun ever.

Its best served warm, with butter or olive oil and balsamic vinegar, for dipping.

Rosemary Focaccia

Adapted from Epicurious

1 pkg. (or 2 1/4 tsp) active dry yeast
5 cups unbleached all-purpose flour, plus additional for kneading
1/3 cup extra-virgin olive oil
1-2 Tbsp. finely chopped fresh rosemary
1 Tbsp. coarse salt (divided)

Stir the yeast into 1/3 cup warm water in a large bowl or the bowl of your mixer and let stand until creamy/foamy, about 5 minutes. Add 4 cups of flour, half of the oil, and 2 tsp. salt and beat by hand or with the paddle attachment of the mixer until a dough forms. Replace paddle with a dough hook, add the remaining flour and stir until well blended and sticky 3-4 minutes.

Turn the dough out onto a lightly floured surface and knead, adding another spoonful of flour if its too sticky, until the dough is smooth but tacky. Transfer to a lightly oiled bowl and turn dough to coat with oil, then cover with a towel. Let rise for an hour or so, until doubled in bulk.

Press dough into two 913 pans that have been sprayed with nonstick spray. Cover with a tea towel and let rise another hour. Preheat oven to 425F.

Stir together the rosemary and remaining oil. Poke all over the surface of the loaves with your finger poke deep! and then brush with rosemary oil, letting it pool in the indentations. Sprinkle with salt and bake for 20-25 minutes, until golden.

Serve warm or at room temperature. Makes 2 loaves.
