Baseball Pretzel Bats and Baseball Cake Pops!

The World Series is almost here which is a huge deal for my Italian NY hubs. He is a big Yankee fan and was a bit devastated with his teams last two losses and Jeters broken ankle, so I decided a little baseball fun was in order. I made some great game day treats that are so easy and can be customized to your team colors. After he saw my efforts to cheer him up, he told me he had a Yankee epiphany, that they were going to come back for the win! I cant help but be charmed by my baseball loving man. Pretzel Bats

1 cup semi sweet chocolate chips

12 pretzel rods

1 tablespoon vegetable oil

sprinkles

wax paper

Place a glass bowl on top of a pot of simmering water, making sure the bowl does not touch the water (or use a double boiler). Pour in the chocolate chips and stir frequently until almost melted, then add the oil and stir until smooth and fully melted. Dip each pretzel into the chocolate and use the spoon to cover. Tap any excess chocolate and cover with sprinkles in your teams colors. Place on wax paper to dry for about 3 hours.

Baseball Cake Pops

I bought a pan like this bake pop pan to make cake pops. I normally make cake from scratch, but decided to follow some tips by using a box (with no hydrogenated oils). I made the box chocolate cake with 1/2 the amount of oil, 3 eggs, 1/2 the amount of water and swapped it with milk, then added a package of chocolate pudding. Then I sprayed the inside of the pans with baking spray (with flour) and the outside of the top pan with regular cooking spray. I cooked them at 350 for 20 minutes, but I have a feeling they could have come out at 18 minutes. My original plan was to melt white chocolate, but my chocolate must have been old because it curdled so I used frosting and piped on a string of red to make it look like a baseball.

The other day when I was perusing the web and found my amazing new Mr Lid containers for school lunches, I also came across a pan that bakes tortillas in 5 minutes. I couldnt resist because my kids are obsessed with tortillas and will eat just about anything I make if I put in in a tortilla. Hmm, should I try liver and onions? Why push it. Anyway, not only will this make a much healthier edible tortilla bowl, but my kids will get to eat their bowl. Yes, Im going for coolest mom award. I get to pick the tortillas too, like whole wheat or multi-grain for added nutrition. This got me excited, so did all the different recipes you can make with these pans too. Of course I had to take it one step further and create my own recipes. Keep reading for what you can make in these amazing pans as well as where to get them

You may be seeing more recipes made in my new favorite pans because I tend to just go for it and see what I can make. Case in point: I had to make cupcakes for my kids school and there was some leftover batter. There was no way I was about to toss chocolate cake batter so I sprayed my Perfect Tortilla pans, poured in the batter and baked for about 20 minutes. Amazing and so fun. Late summer means armloads of zucchini from neighbours, markets and our CSA box. Despite its versatility, all I can think of doing with a glut of zucchini is make cake. Grated raw zucchini adds moisture to chocolate cake, creating a wonderfully dense, not too sweet cake Id choose over any other chocolate cake any day of the week.

Most chocolate zucchini cakes are baked in bundt pans or loaf pans due to their density; if you want cupcakes, bake the batter in lined muffin tins for 25 minutes, or until springy to the touch.

Chocolate Zucchini Cake

adapted from AllRecipes

2 cups all-purpose flour
1 1/4 cups sugar
3/4 cup cocoa
2 tsp. baking soda
1 tsp. baking powder
1/4 tsp. salt
1 cup canola or other mild vegetable oil
4 large eggs
3 cups grated zucchini (about 1 large)
1/2-1 cup chocolate chips or chopped walnuts (optional)

Chocolate frosting (optional)

Preheat oven to 350F and spray a bundt pan or two 4x8 loaf pans with nonstick spray.

In a large bowl, stir together the flour, sugar, cocoa, baking soda, baking powder and salt. In a small bowl, whisk together the oil and eggs; add to the dry ingredients along with the zucchini and chocolate chips (if using) and stir just until combined. Pour into the prepared pan(s).

Bake for 60 minutes (in a bundt pan) or 45-50 minutes in loaf pans. Cool completely before frosting. Serves 16.
