Around here, heaps of ripe tomatoes mean its time to make salsa. Im a huge fan of salsa in pretty much any incarnation. But over the weekend, seeing that I had lots of sweet cherry tomatoes and sweet corn, I wanted to add a little smokiness to counterbalance the sweet vegetables. Now, before you start to worry that Im going to have you grilling or broiling for a simple salsa, relax. Ive got a great way to get subtle smoky flavors right on your stovetop! What is it?

Dry roasting! This is a great method for adding depth to all kinds of sauces, soups, and condiments. Try using this cooking technique for one of your favorite recipes. In the meantime, give this yummy salsa a try.
