Keep Back-to-School Fresh with Easy, Seasonal Fruit Salad

seasonal fruit salad Keep Back to School Fresh with Easy, Seasonal Fruit Salad
No one wants to think about it, but in a few months all the great summer fruits will be gone and well be stuck with pears, apples, oranges, and bananas. But for now, weve got it all! Raspberries, figs, peaches, nectarines, plums, and crisp summer apples abound. So get your kids in on the act, skip the standard oranges and bananas, and brighten everyday school lunches with a simple, fresh, seasonal fruit salad.

I made mine with sweet green Crispin apples, ripe nectarines, and two kinds of plums. The crisp apples lent texture, the nectarines lent sweetness, and the plums added a hint of tang. My daughter loved the break from the ordinary, and the bright flavors of this salad hold up really well in a school lunch.

Late Summer Fruit Salad
serves 4

2 ripe, firm nectarines, pitted and chopped
3 large ripe, firm plums, pitted and chopped
2 crisp summer apples, cored and chopped

In a medium bowl, toss the ingredients together, and serve.

Hint: for a grown-up, dinner worthy side dish, try tossing the salad with a simple lemon vinaigrette (1 part lemon juice to 2 parts olive oil, plus a big pinch of sea salt) and a mellow herb like tarragon. Its also great over a robust lettuce like romaine.
