The Best Ever Ice Cream Sandwich

This past weekend we were invited over to my aunts house for a college send-off dinner. I was asked to bring dessert for my ice cream loving cousin and had planned to make ice cream sandwiches out of brownies, but trauma got in the way. My 6 year old daughter hurt her foot mid prep and all attention had to be redirected towards her (ps, this always seems to happen!). As I tended to her wound, I was not left with enough time to finish up my ice cream creations. So I improvised and made what my husband calls crack sandwiches. Keep reading to get the most addicting ice cream sandwich recipe.

Heres what ended up happening: I went to the pantry and grabbed a box of vanilla wafer cookies and some vanilla caramel ice cream from the freezer. I just scooped and squished and re-froze. They were a huge hit. We ended up making these for dessert tonight and the kids got to make their own. Perfect size dessert for little ones and adults trying to maintain some portion control.

Best Ever Ice Cream Sandwich

1 box of vanilla wafer cookies (nilla wafers)

1 carton of reduced fat vanilla ice cream with caramel

Allow the ice cream to sit out for a few minutes to just soften. Line up the cookies on a tray that will fit in your freezer. Scoop a small spoonful onto each cookie and place another cookie on top. Press down lightly. Place ice cream sandwiches on the tray into the freezer until frozen and hard (or just eat as you make!). Now you can eat them all to yourself because you wont be able to stop.
