This year I am packing my daughters lunch two days a week and sending her to school with a snack four days a week. Like all parents, when packing her food I do my best to send her with things that are healthy and homemade. I want a balance of protein, fruit, vegetables, and whole grains in her bag whenever possible. Luckily she doesnt have any allergies, but there are lots of kids in her class that do. Therefore we have to pack food that is completely nut-free and preferably even made in a facility that processes nuts. This can be a challenge to people like me who are used to whipping up peanut butter sandwiches on the double. But, there are lots of great nut-free snacks out there if you look around. Here are a few of our favorites!
Blueberry Flax Muffins
A muffin can make a great lunchbox snack because it is so portable and is just the right size for little hands. This muffin is completely nut free and is even given a healthy boost by the addition of flax seed. The nice balance of whole grains and fruit makes it a delicious, nutritious snack any day of the week!
