One of the dishes people seem to be skeptical about cooking on a weeknight is fish. There seems to be a lot of fear about overcooking or, worse, undercooking. Also, I get a lot of questions of how to impart flavor into fish without overpowering the meat completely. In an attempt to allay your fish cooking fears I thought Id share one of my favorite simplest ways to cook salmon. This a basic, easy fish to cook and most families like it. Plus, it is healthy! What I do is whip up these easy dried spice rub, give the fish a little massage, and pop it in the oven. It is SO easy! And, in case you were wondering, the spice rub is so similar to our favorite homemade taco spice. It really doesnt take anything unusual from your pantry. I guarantee, give this simple weeknight fish recipe a try and enjoy!

Spiced Rubbed Salmon

4 salmon fillets (8 ounces each)

1/3 cup kosher salt

1/4 cup chili powder

1/4 cup paprika

2 tablespoons garlic powder

1 tablespoon cayenne pepper

1 tablespoon freshly cracked black pepper

2 tablespoons dried thyme

Olive oil

1. Mix together the dry spices in a small bowl.

2. Brush the top of the salmon with a light coating of olive oil, about 1 teaspoon per fillet, then rub each fillet with even amounts of spice.

3. Preheat the oven to 350 and bake the salmon on a lined baking sheet for 30 to 40 minutes, or until just cooked through. Then, allow to cool and serve.
