Avocado Deviled Eggs

Ripe avocado turns traditional boiled eggs into these delicious Avocado-Garlic Deviled Eggs. The natural creaminess and flavor of an avocado pairs perfectly with the rich yolk of a hard-boiled egg. Simple to make, and truly scrumptious, this recipe may just overtake your traditional deviled egg recipe to become a new favorite!

AvocadoDeviledEggs

• 12 hard-boiled eggs
• 1 very ripe avocado
• 1 tablespoon coconut oil, softened
• 1 garlic clove, finely chopped
• 3 tablespoons mayonnaise
• salt and pepper to taste
• 1 tablespoon fresh parsley, finely chopped

Slice eggs in half, remove yolks from the center of each egg and place in a small bowl. Add the avocado, coconut oil, garlic clove, mayonnaise, and salt and pepper. Whip together with a beater until smooth and whippy. Transfer to a plastic bag, snip off the corner of the bag, and pipe yolk-mixture into the center of each egg. Sprinkle with parsley, then serve and enjoy.
