Many of my favorite late night shows are nominated for Best Variety Show at the 2012 Emmy Awards. Notably, The Colbert Report, Jimmy Fallon, SNL, The Daily Show and more. I think Im rooting for The Daily Show. I mean did you see the Robert Pattinson interview a few weeks ago well done. And hilarious with the Attention Twilight-Fans warning plastered across the screen. That deserved an Emmy for creativity and hilariousness. And when late-night TV watching, you need a snack. And this rich and creamy chocolate coconut dip is pretty amazing. Spread it on toast, crackers, fruit or eat it by the spoonful..
Late Night Chocolate Coconut Dip
5 Tbsp virgin coconut oil
1 tsp raw cacao nibs
1/2 avocado
2 tsp cacao powder or another tsp of nibs
dash cinnamon
2 tsp agave syrup
pinch salt
note: you can easily make this with either cacao nibs OR cacao powder you dont need both although the double cacao flavor and texture is nice.
To Make: Blend in a Vitamix or blender until smooth. Place in the fridge or freezer until the top layer starts to harden up but only long enough for the mixture to turn into a dip consistency. Too long and you will get rock-hard choco fudge so be careful.
Dip and enjoy. Best when paired with some hilarious late night television.
