Pork is one of those meats that I could eat just about any way and any cut. If you think about pork is pretty amazing, from bacon to chops, so many flavors and varieties. We like to keep things lean in our house so instead of steak we will cook up a thick pork chop, which the kids call steak. Lately Ive been using the slow cooker and its got the kids begging nightly for their favorite dish. Get the recipe for this moist and tender pork chop after the jump
Slow Cooker Pork Chop Recipe
2 to 4 trimmed pork chops (we use boneless)
3 to 4 cups chicken stock
1 onion sliced
2 cloves crushed garlic
1 teaspoon thyme
salt and pepper
Generously salt and pepper the pork chops on both sides. Lightly oil a saut pan and heat over medium high. Place the pork chops in the pan once it is sizzling hot. Cook for about 1 to 2 minutes, or until brown crust forms, then flip and cook an additional minute to brown the other side. Remove from pan and place the sliced onions into the pan and cook until slightly tender and beginning to turn translucent. Add the garlic and cook for another minute. In a slow cooker add stock, thyme and seared pork chops, making sure the chop are covered with liquid. Add the onion and garlic and cook on low for about 4 hours or until internal temp reads about 165 degrees.
Remove the the liquid from the slow cooker into a saut pan and cook over medium. Add flour to thicken until gravy consistency forms. Plate your pork and covers with gravy (the kids like the gravy in a small bowl so they can dip their meat). We serve this with harvest grains.
