A couple of years ago I admitted that I really dont like broccoli that much. I can attest that if you have kids who dont like broccoli, but will certainly eat other vegetables, they will grow to be happy, healthy adults. Interestingly, the new twist Ive been handed is that my daughter likes broccoli!! She ate it at a friends house and came home and asked for some. How could I say no?! So, Ive been working on some classic broccoli recipes that my daughter likes and I can, at least, semi-enjoy. This fun broccoli casserole is one of those dishes that hits the spot. We all seem to like it and my daughter gets such a kick that crackers are crumbled on top. If you have a broccoli hater in your house give this a try they just might come around!
Broccoli Casserole with Ritz Crackers
adapted from Kraft
10 ounces frozen chopped broccoli, thawed and drained
8 ounces Gruyere cheese, coarsely grated
1 1/2 cups Ritz crackers, crushed
4 tablespoons unsalted butter, melted and cooled
1. Preheat the oven to 350F.
2. In a large bowl mix the broccoli, cheese, and half of the crackers. Then, pour it into a 2-quart baking dish.
3. Combine the butter and remaining crackers in a small bowl and sprinkle over the top. Bake for about 45 minutes or until the cheese is melted and heated through.
