After spotting these Boo Chips there was only one thing to do with them make Spooky Nachos! These nachos are pizza party themed with pepperoni, cheese, sliced bell pepper, parsley and some red pepper flakes. Perfect for a spooooky movie night or Halloween party. And my nachos even have a secret!..

Secret Ingredients. These fun spooky nachos are vegan! My pizza nachos are made using non-dairy cheese and soy pepperonis. Just as delicious as traditional pizza toppings but made using plant-based ingredients.

So for your Halloween-themed party or movie night, serve up these fun and spooky party nachos!

Spooky Pizza Party Nachos
vegan, serves 2-3

2 cups Boo Potato chips (by Tonys Fine Foods bought from Whole Foods)
1/4 cup vegan cheese (Daiya or Teese brands melt best)
3-5 vegan pepperonis (Tofurky brand used)
1/4 red bell pepper, sliced
pinches of parsley or cilantro
red pepper flakes (optional)

Directions: Add the cheese and pepperonis to the chips and either microwave on high until the cheese melts or place in oven on broil setting until cheese melts. The heat will also cook the pepperonis. Garnish with the fresh bell peppers, parsley and red pepper flakes. Serve warm!
